Description

This homemade red cabbage recipe is a hearty and vegetarian dish, ideal for autumn. With the Wundermix WunderSlicer V2, the red cabbage can be grated quickly and easily. The preparation time is approx. 4 hours, including the steaming time. The recipe is suitable as a main course or as a side dish.

Ingredients (9 ingredients)

  • 1 Stück Red cabbage
  • 2 Stück Onion
  • 3 Stück Apple diced
  • 3 Stück Bay leaves on the stem
  • 6 Stück Cloves whole
  • Oil
  • Vinegar essence
  • Salt
  • Sugar

Preparation (7 steps)

Prepare red cabbage

Place red cabbage with the Wundermix WunderSlicer V2 on the mixing bowl lid and grate with the appropriate disc (fine or coarse). Catch the cut red cabbage.

Prepare apples and onions

Peel, quarter and dice apples. If no apples are available, use applesauce. Peel the onions and cut into small cubes.

Sauté onions

Put the finely chopped onions in the mixing bowl, add oil and sauté for 3 min./120°C/level 1.

Add red cabbage and spices

Add the grated red cabbage, salt and bay leaves to the mixing bowl. Add some water.

Steam red cabbage

Set the stove to maximum level and steam/braise for about 3 hours.

Add apples and vinegar

After about 1 1/2 hours, add the diced apples and vinegar essence and stir in between.

Season and let steep

At the end of the total 3-hour steaming/braising time, season with salt or sugar as needed. Do not use pepper! Leave to stand overnight and season again with vinegar and salt as needed the next day.
