Description

These creamy pumpkin rigatoni are an absolute highlight in autumn! The butternut squash gives the sauce a wonderfully sweet note that harmonizes perfectly with the spicy garlic and fresh spinach. I especially like to make this dish when it gets colder outside, as it warms you up so nicely. The preparation is super easy and thanks to the Thermomix® it's done in no time. An ideal dish for a quick lunch or a cozy dinner with friends. And the best part: it's vegetarian!

Ingredients (13 ingredients)

  • 500 g Butternut squash
  • 1 piece Onion
  • 1 clove Garlic
  • 2 tbsp Olive oil
  • 1 tbsp Tomato paste
  • 350 ml Vegetable broth
  • 100 ml Whipping cream
  • 500 g Short pasta (e.g. rigatoni, penne)
  • to taste Salt
  • 50 g Baby spinach
  • 80 g Grated Parmesan or vegetarian hard cheese
  • 2 tbsp Lemon juice
  • to taste Pepper

Preparation (10 steps)

Prepare pumpkin, onion and garlic

Cut 500 g butternut squash into approx. 2 cm cubes. Peel and quarter 1 onion. Peel 1 clove of garlic.

Chop onion and garlic

Put onion and garlic in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Sauté pumpkin, onion and garlic

Add 2 tbsp olive oil and sauté for 3 min./120°C/speed 1.

Add tomato paste

Add 1 tbsp tomato paste and sauté for 1 min./120°C/speed 1.

Add pumpkin cubes and liquid

Add the pumpkin cubes, 350 ml vegetable broth and 100 ml whipping cream to the mixing bowl.

Simmer pumpkin sauce

15 min/212°F/Speed 1 100

Close the mixing bowl lid and simmer for 15 min./100°C/speed 1.

Puree pumpkin sauce

Thermomix® Setting
30 sec/Speed 8-10

Puree the pumpkin sauce for 30 sec./speed 8-10 until the desired consistency is reached. Puree longer if necessary.

Stir in Parmesan

Thermomix® Setting

Add half of the 80 g grated Parmesan or vegetarian hard cheese and stir in for 10 sec./speed 3.

Season the sauce

Add 2 tbsp lemon juice, salt and pepper and stir for 10 sec./speed 2. Season to taste and add more seasoning if necessary.

Fold in pasta and spinach

Thermomix® Setting
20 sec/Linkslauf/Speed 2 Reverse

Add 500 g cooked, drained short pasta (e.g. rigatoni, penne) and 50 g washed baby spinach to the mixing bowl and fold in for 20 sec./reverse/speed 2.
