Description

This Curry Rice dish with smoked tofu is an absolute highlight in my kitchen! I love how quick and easy it is to prepare and how incredibly delicious it tastes. The smoked tofu gives the dish a great spice and the toasted pine nuts provide a pleasant crunch. Perfect for a quick lunch or a light dinner. If you like, you can sprinkle some fresh coriander over it. A great dish that can also be prepared vegan and is guaranteed to taste good for everyone! Vary the vegetables according to season and taste.

Ingredients (10 ingredients)

  • 2 tazas Cooked white rice
  • 80 gramos Spring onion or scallion
  • 180 gramos Tofu
  • 1 cucharadita Curry powder
  • 30 gramos Pine nuts
  • 1 copa White wine
  • 4 cucharaditas Black sesame seeds
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 1 cucharadita Olive oil

Preparation (5 steps)

Chop onion

Add 80 g spring onion into the mixing bowl and chop for 3 sec./speed 5. If necessary, scrape down the sides with the spatula.

Add 1 tsp olive oil and sauté for 3 min./120°C/speed 1.

Add 180 g cubed tofu and fry for 5 min./120°C/reverse speed 1.

Add rice and spices

Thermomix® Setting
3 min/212°F/Linkslauf Speed 1 100 Reverse

Add 2 cups cooked rice, 1 tsp curry powder, 30 g pine nuts, 1 glass white wine, 1 pinch salt and 1 pinch pepper and stir in for 3 min./100°C/reverse speed 1.

Arrange curry rice with tofu on plates and sprinkle with 4 tsp black sesame seeds.
