Description

This creamy chicken and rice is a dish that reminds me of family meals on Sundays. The combination of tender chicken with bomba rice, which absorbs all the flavor of the broth, is simply delicious. The recipe is simple, but requires patience so that the rice is perfect, creamy and full of flavor. Ideal for a cold day or a special celebration. Go ahead and prepare it and surprise your guests with this traditional and comforting dish! You can add some sliced ​​mushrooms to give it an extra touch of flavor. Enjoy!

Ingredients (15 ingredients)

  • 1 piece whole breast cut into cubes
  • 1 piece spring onion cut into cubes
  • 2 clove garlic
  • 1 piece Italian pepper in small cubes
  • 2 tbsp Tomato paste
  • 75 ml wine for cooking
  • 320 gr bomba rice
  • 1500 ml hot water
  • 1 tbsp chicken broth powder
  • 1 pinch Salt
  • 1 pinch white pepper
  • 1 pinch food coloring
  • 1 pinch cumin powder
  • 30 ml EVOO
  • 1 puñado fresh peas

Preparation (9 steps)

Chicken preparation

Cut 1 whole chicken breast into cubes. Reserve.

Vegetable sauce

Chop 1 spring onion into cubes, 2 cloves of garlic and 1 Italian pepper into small cubes. Reserve.

Sauté garlic and onion

Add 30 ml of extra virgin olive oil, the 2 minced garlic cloves to the bowl and program 3 seconds/speed 7 to chop. Next, add the chopped spring onion and sauté for 3 minutes/120°C/speed 1.

Incorporate the chopped Italian pepper and sauté for 5 minutes/120°C/speed 1. Add 2 tablespoons of tomato paste and sauté for 2 minutes/120°C/speed 1.

Add 75 ml of cooking wine and program 2 minutes/Varoma/speed 1 without the measuring cup to evaporate the alcohol.

Add 1500 ml of hot water with 1 tablespoon of chicken broth powder. Program 60 minutes/98°C/speed 1/Reverse. Place the basket on the lid to avoid splashing.

Add 1 handful of fresh peas and program 10 minutes/98°C/speed 1/Reverse. Place the basket on the lid to avoid splashing.
