Description

This creamy mushroom risotto, prepared in the Thermomix®, is a hearty main course with king oyster mushrooms, onions, garlic, and risotto rice. Refined with white wine and Parmesan, it offers an authentic Italian taste experience. Preparation takes about 60 minutes, of which 15 minutes are active working time, and yields 2 servings. Ideal for autumn cuisine and lovers of warm, filling dishes.

Ingredients (9 ingredients)

  • 200 g King Oyster Mushrooms
  • 100 g Onions
  • 1 Zehe Garlic
  • 100 g Swiss Chard
  • 125 g Risotto Rice
  • 125 ml White Wine
  • 50 g Parmesan
  • 400 ml Vegetable Stock
  • 225 g Shrimp

Preparation (8 steps)

Chop onions and garlic

Place onions (100g) in the mixing bowl and chop for 3 sec./speed 5. Transfer. Place garlic (1 clove) in the mixing bowl and chop for 3 sec./speed 7. Transfer.

Sauté onions

Sauté the onions in the mixing bowl with a little oil for 3 min./120°C/speed 1.

Sauté rice and garlic

Add rice (125g) and sauté briefly. Then add the garlic and sauté briefly as well.

Deglaze with white wine

Deglaze with white wine (125ml).

Simmer risotto

25-30 min/212°F/Speed 1/Linkslauf 212°F Reverse

Gradually pour in 400ml vegetable stock in small sips and simmer for 25-30 min./100°C/speed 1 /Reverse. Leave the measuring cup in place. Stir regularly with the spatula.

Fry shrimp (externally)

Fry the shrimp (225g) in a separate pan.

Add mushrooms, Swiss chard and shrimp

Add king oyster mushrooms (200g, cleaned and roughly diced), Swiss chard (100g, cut into thin strips) and the fried shrimp to the mixing bowl and cook for 5-10 min./100°C/speed 1 /Reverse. Leave the measuring cup on.

Stir in Parmesan

Add Parmesan (50g, freshly shaved) and stir in for 1 min./60°C/speed 1. Leave the measuring cup on.
