This risotto with strawberries and cranberries is a true explosion of spring flavors! I love preparing this dish for a Sunday brunch or a light lunch. The sweetness of the strawberries blends wonderfully with the acidity of the cranberries, all coated in a creamy cream. It is a comforting and original dish that will surprise your guests.   • 10 cl liquid cream
  • 50 g butter
  • 3 c. à s. grand marnier
  • 10 cl orange juice
  • 100 g dried cranberries
  • 1.5 l whole milk
  • 250 g strawberries
  • 300 g round rice

Cooking the rice

Thermomix® Setting

Put the round rice and the butter in the bowl of the Thermomix. Cook 3 Min./120°C/Stufe 1 without the measuring cup.

Adding the liquids and cranberries

Add the orange juice, the grand marnier and the dried cranberries in the bowl of the Thermomix. Mix 10 Sek./Stufe 2.

Cooking the risotto

20 min/194°F/Linkslauf Speed 1 90 Reverse

Add the whole milk in the bowl of the Thermomix. Cook 20 Min./90°C/Linkslauf Stufe 1 without the measuring cup. The milk must be added gradually during cooking.

Preparation of strawberries

During the cooking of the risotto, wash and cut the strawberries in small dices (and in slices for the presentation). Reserve a few slices for the decoration.

Finalization of the risotto

Remove the risotto from the bowl of the Thermomix. Add the diced strawberries and the liquid cream. Mix delicately with the spatula.

Service

Serve the risotto in small bowls and decorate with the reserved strawberry slices.
