Description

This fried rice with chicken and vegetables is a quick and inexpensive main course from the Thermomix®. Jasmine rice, chicken breast fillet, carrots and peppers are processed with sesame oil into a delicious meal. The recipe is lactose-free and is ideal for light cuisine or as a family meal. Ready in just 30 minutes for 4 servings.

Ingredients (13 ingredients)

  • 250 g Jasmine rice
  • 300 g Chicken breast fillet
  • 2 Carrots
  • 1 Red bell pepper
  • 1 Red onion
  • 50 g Peas - frozen
  • 2 Garlic cloves
  • 2 EL Sesame oil
  • 4 Eggs
  • Salt
  • Pepper
  • 6 EL Soy sauce
  • 3 EL Brown sugar

Preparation (10 steps)

Prepare rice

Prepare the rice according to the package instructions. Alternatively, 500 g of cooked rice from the previous day can be used.

Chop onion and garlic

Add 1 red onion, peeled and halved, and 2 garlic cloves to the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Sauté onion and garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp sesame oil or rapeseed oil and sauté for 3 min./120°C/speed 1.

Prepare vegetables

Peel 2 carrots and cut into thin strips. Cut 1 red bell pepper into strips. Set the vegetables aside.

Fry chicken

Cut 300 g chicken breast fillet into strips, season with salt and pepper and fry vigorously in a pan with a little oil until golden brown on all sides. Then remove from the pan and set aside.

Sauté vegetables

3 min/248°F/Speed 1 120

Add carrots and peppers to the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare sauce and add rice

Thermomix® Setting
3 min/212°F/Linkslauf Speed 2 100 Reverse

Mix 6 tbsp soy sauce and 3 tbsp brown sugar in a bowl. Add the cooked rice, the sauce and 50 g frozen peas to the mixing bowl and stir in for 3 min./100°C/reverse rotation speed 2 until the sauce is well distributed.

Mix in chicken

Add the fried chicken to the mixing bowl and stir in for 1 min./100°C/reverse rotation speed 1.

Fry fried eggs

Heat some oil in another pan and fry 4 eggs as fried eggs. Season with salt.

Serve

Arrange the fried rice on plates and serve with fried eggs.
