Description

These roasted apple snails are a delicious pastry that is perfect for the autumn and Christmas season. The dough is prepared in the Thermomix® and filled with a caramelized roasted apple filling. The snails are baked in the oven until golden brown and are an ideal dessert for festive occasions.

Ingredients (15 ingredients)

  • 500 g Flour
  • 250 ml lukewarm Milk
  • 80 g soft Butter
  • 70 g Sugar
  • 1 Stück Egg
  • 0.5 Würfel fresh Yeast
  • 1 TL Vanilla sugar
  • 1 Prise Salt
  • 0.5 TL Cinnamon
  • 3 Stück Apples, quartered
  • 3 EL Sugar
  • 1.5 TL Cinnamon
  • 1.5 EL Butter
  • 75 g Raisins
  • 75 g chopped Hazelnuts

Preparation (8 steps)

Heat milk, sugar and yeast

Put 250 ml lukewarm milk, 70 g sugar and 0.5 cubes of fresh yeast in the mixing bowl and heat for 2 min./37°C/level 2.

Prepare dough

Add 80 g soft butter, 1 egg, 1 pinch of salt and 1 tsp vanilla sugar and mix for 10 sec./level 4.

Knead dough

Add 500 g flour and knead for 3 min./kneading stage to a soft, smooth dough.

Let the dough rise

Form the dough into a ball, lightly flour it and let it rise, covered, in a warm place for 45-60 minutes until the volume has doubled.

Prepare roasted apple filling

Finely grind 75 g chopped hazelnuts in the Udo and grate 3 apples, quartered, in the Udo.

Caramelize roasted apple filling

Melt 1.5 tbsp butter in a pan. Add 3 tbsp sugar, 1.5 tsp cinnamon, 75 g raisins (optional) and the grated apples and nuts and caramelize everything for 5-10 minutes until the apples are soft and lightly golden brown. Let the filling cool completely.

Roll out and fill the dough

Roll out the dough on the dough mat into a rectangle (approx. 35 × 25 cm). Spread the cooled roasted apple filling evenly on top.

Shape and bake snails

Roll the dough up tightly from the long side. Cut into approx. 2-3 cm thick slices with dental floss. Flatten each snail slightly and place on the James (Big Oven Magician) with some space in between. Bake at 180 °C top/bottom heat for about 35 minutes.
