Description

This citrus roasted chicken is a festive and tasty dish, perfect for a family meal or a special occasion. The orange brings a touch of acidity and freshness that goes perfectly with the poultry. Oregano or rosemary delicately flavor the flesh, while the semi-salted butter ensures an irresistible crispness to the skin. I often prepare this dish in the autumn, when oranges are at their peak. A real treat, especially accompanied by a creamy sweet potato puree! Preparation is simple and the result is always impressive. A dish that warms hearts and taste buds!

Ingredients (6 ingredients)

  • 1.8 kg white or yellow label rouge chicken
  • 2 piece organic oranges
  • 1 bunch oregano or rosemary
  • 30 g semi-salted butter
  • to taste flower of salt with roasted spices and combawa
  • to taste pepper

Preparation (8 steps)

Orange zests

Using a peeler, take the zest of an orange and cut it into thin strips. Reserve.

Chicken preparation

Using a sharp knife, make incisions on the breasts at the limit of the legs. Slide a finger into the incision to detach the flesh, but without tearing the skin. Perform the same operation at the legs.

Insertion of zests

Insert the orange zest strips into each incision.

Preparation of the garnish

Cut the remaining orange in half and slide it inside the chicken with the bunch of oregano or rosemary.

Preparation of orange segments

Remove the orange segments and arrange them around the chicken in a 30x45cm baking dish.

Seasoning

Salt and pepper the chicken and orange segments generously. Distribute pieces of semi-salted butter on the chicken.

Oven cooking

Put the dish in a cold oven and set the temperature to 215°C. Cook for 1 hour.

End of cooking

After one hour, move the chicken thighs apart so that it cooks well everywhere and put it back in the oven for an additional 15 minutes.
