Description

This Big Maec Roll is a savory dish reminiscent of a well-known burger. The roll consists of a yeast dough filled with a ground beef mixture, pickles, and iceberg lettuce. Preparation takes about an hour and yields 6 servings. Ideal for parties or as a hearty snack.

Ingredients (26 ingredients)

  • 250 ml lukewarm water
  • 1 Würfel fresh yeast
  • 1 TL sugar
  • 500 g wheat flour
  • 1 TL salt
  • 50 ml oil
  • 2 Stück onions
  • 20 ml oil
  • 500 g ground beef
  • 2 TL paprika powder
  • 1 TL garlic powder
  • 1 TL onion powder
  • 0.5 TL pepper
  • 1 TL salt
  • 100 ml water
  • 100 g salad mayonnaise
  • 50 g ketchup
  • 1 TL mustard
  • 1 TL paprika powder
  • 0.5 TL garlic powder
  • 0.5 TL onion powder
  • 0.25 TL pepper
  • 1 TL vinegar
  • 100 g diced pickles
  • 100 g shredded iceberg lettuce
  • sesame seeds

Prepare the yeast dough

Add 250 ml lukewarm water, 1 cube of fresh yeast, and 1 tsp sugar to the mixing bowl and mix for 2 min./37°C/speed 2.

Knead the dough

Thermomix® Setting

Add 500 g wheat flour, 1 tsp salt, and 50 ml oil and knead into a dough for 3 min./kneading function.

Let the dough rise

Place the dough in a bowl, cover, and let rise in a warm place for about 30 minutes, until doubled in size.

Chop the onions

Place 2 onions (approx. 200g) in the mixing bowl and chop for 3 sec./speed 5.

Sauté the onions

Add 20 ml oil to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare the ground beef

Brown 500 g ground beef in a separate pan until crumbly.

Prepare the ground beef mixture

Add the browned ground beef, 2 tsp paprika powder, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp pepper, 1 tsp salt, and 100 ml water to the sautéed onions in the mixing bowl and simmer for 5 min./100°C/reverse speed 1.

Prepare the sauce

Add 100 g salad mayonnaise, 50 g ketchup, 1 tsp mustard, 1 tsp paprika powder, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp pepper, and 1 tsp vinegar to the mixing bowl and mix for 20 sec./speed 3.

Roll out and top the dough

Roll out the dough on a floured work surface into a rectangle. Spread the ground beef mixture on top, cover with 100 g diced pickles and 100 g shredded iceberg lettuce.

Shape and bake the roll

Roll up the dough from the long side and cut into about 6 equal pieces. Place the rolls on a baking sheet lined with parchment paper, sprinkle with sesame seeds and bake in a preheated oven at 180°C top/bottom heat for about 20 minutes.

Serve

Serve the baked rolls with the sauce.
