Description

This Roman oxtail stew, or coda alla vaccinara, is a rich and flavorful dish that warms the heart, perfect for cold autumn evenings. The oxtail, slowly cooked in a tomato sauce flavored with cured pork cheek, celery, carrots and spices, becomes very tender and easily detaches from the bone. The addition of pine nuts, raisins and bitter cocoa gives an irresistible sweet and sour touch. I often prepare it for family celebrations, always with great success. A true comfort food of Roman tradition!

Ingredients (17 ingredients)

  • 1.5 kg oxtail
  • 800 g chopped tomatoes
  • 50 g cured pork cheek
  • 4 coste celery
  • 1 cipolle onions
  • 1 carote carrots
  • 1 clove garlic
  • 200 ml white wine
  • 5 chiodi cloves
  • 1 peperoncini fresh chili peppers
  • 1 tsp bitter cocoa
  • pine nuts
  • raisins
  • parsley
  • olive oil
  • fine salt
  • pepper

Preparation (6 steps)

Preparation of the vegetable mixture

Insert the onion, garlic, carrot and a celery stalk into the bowl. Chop for 5 Sec./Speed 5.

Sauté the mixture with the cured pork cheek

Add olive oil to the bowl and sauté the vegetable mixture together with the diced cured pork cheek for 5 Min./120°C/Speed 1.

Seal the oxtail

Add the oxtail to the bowl and brown for 10 Min./Varoma/Speed 1. Use the lid without the measuring cup.

Flavor and deglaze

5 min/212°F/Speed 1 100

Add the chopped chili pepper, cloves, chopped parsley, fine salt, pepper and deglaze with the white wine. Cook for 5 Min./100°C/Speed 1.

Cooking with the chopped tomatoes

Add the chopped tomatoes to the bowl. Cook for 180 Min./95°C/Speed 1.

Final addition of ingredients

Add the pine nuts, squeezed raisins, drained celery and bitter cocoa dissolved in a little of the cooking liquid. Adjust salt if necessary. Cook for 15 Min./95°C/Speed 1.
