Description

This hearty red cabbage with potato leek gratin, prepared in the Thermomix®, is a vegetarian main course, ideal for the cold season. Main ingredients are red cabbage, potatoes from the previous day and leek, refined with garlic and olive oil. The recipe is ideal for using leftovers and is a tasty family meal. The preparation time is a total of 75 minutes for 4 servings.

  • 400 g Red cabbage
  • Fat for the baking sheet
  • 3 Zehe(n) Garlic
  • 3 EL Olive oil
  • Salt
  • Pepper
  • 1000 g Potatoes from the previous day
  • 300 g Leek
  • 200 ml Milk
  • 150 ml Whipping cream
  • Nutmeg
  • 100 g Gratin cheese

Preparation (9 steps)

Prepare red cabbage

Clean, wash and cut the red cabbage into approx. 1 cm thick slices. Grease a baking sheet with fat. Place the red cabbage slices on the prepared baking sheet.

Prepare garlic oil

Put 3 cloves of garlic into the mixing bowl and chop for 3 sec./speed 7. Use the spatula to push down.

Mix garlic oil

10 sec/Speed 3

Add 3 tbsp olive oil, salt and pepper to the chopped garlic in the mixing bowl and mix for 10 sec./speed 3.

Brush red cabbage

Brush the red cabbage steaks with the garlic oil mixture. Preheat the oven to 160 °C circulating air.

Prepare potatoes and leek

Cut the cooked potatoes from the previous day into slices. Clean, wash and cut the leek into rings. Prepare a casserole dish (approx. 25 x 20 x 5 cm).

Layer potatoes and leek

Layer the potato slices and leek rings alternately in the casserole dish.

Prepare milk-cream sauce

Thermomix® Setting
3 min/194°F/Speed 2 90

Put 200 ml milk and 150 ml whipping cream into the mixing bowl. Season with salt, pepper and nutmeg and heat for 3 min./90°C/speed 2.

Complete gratin

Pour the milk-cream sauce over the potato-leek gratin. Sprinkle 100 g of gratin cheese over it.

Cook red cabbage

Place the red cabbage steaks in the preheated oven and cook on one of the lower racks for approx. 40-45 minutes.
