Description

This soft cake is a timeless classic, perfect to accompany a coffee or a tea. I often prepare it for birthdays or impromptu afternoon snacks. Its light texture and its simple taste make it a dessert appreciated by all. The recipe is very easy to make with the Thermomix®, which makes it ideal for beginners in pastry. One can decorate it with apples, cocoa or a chocolate ganache to vary the pleasures. A true delight to share with family or friends!

Ingredients (8 ingredients)

  • 1 packet baking powder
  • 1 packet vanilla sugar
  • 1 pinch salt
  • 1 verre à moutarde oil
  • 1 verre à moutarde milk
  • 300 g sugar
  • 4 piece eggs
  • 300 g flour

Mixing wet ingredients and sugar

In the bowl of the Thermomix, place 300g of sugar, a packet of vanilla sugar and 4 egg yolks. Mix for 3 Min./Stufe 4/keine Temperatur. Then add a mustard glass of milk and a mustard glass of oil. Mix again for 1 Min./Stufe 3/keine Temperatur.

Incorporating flour and yeast

Add 300g of flour and a packet of baking powder to the Thermomix bowl. Mix for 2 Min./Stufe 3/keine Temperatur. Use the spatula to scrape the edges if necessary.

Beating the egg whites until stiff

Thermomix® Setting
3 min/Speed 3.5/keine

Clean and dry the Thermomix bowl. Insert the whisk. Add the 4 egg whites and a pinch of salt. Beat the egg whites until stiff for 3 Min./Stufe 3.5/keine Temperatur.

Gently incorporating the egg whites

Thermomix® Setting
30 sec/Linkslauf Speed 2/keine Reverse

Remove the whisk. Gently pour the egg whites into the Thermomix bowl and mix for 30 Sek./Linkslauf Stufe 2/keine Temperatur, using the spatula to help incorporate the whites without breaking them.

Baking in the oven

Preheat the oven to 180°C. Pour the batter into a buttered and floured mold. Bake in the oven for about 45 minutes. Check for doneness with the tip of a knife.
