Description

These rustic crostini are a feast for the palate! I love how the slightly bitter herbs harmonize with the creamy mozzarella and spicy sausage. A touch of anchovies adds a surprising, salty note. Perfect as an appetizer for a cozy dinner with friends or as a tasty snack in between. The preparation is very simple and quick, especially if you already use cooked herbs. An absolute must for all lovers of Italian cuisine! Vary the ingredients as you like – there are no limits to your creativity. Enjoy your meal!

Ingredients (10 ingredients)

  • 500 g boiled and squeezed field herbs
  • 1 q.b. coarse salt
  • 0.5 clove garlic
  • 1 q.b. chili pepper
  • 1 q.b. extra virgin olive oil
  • 1 q.b. sliced baguette
  • 1 q.b. diced mozzarella
  • 1 q.b. crumbled sausage
  • 1 q.b. anchovies in oil
  • 1 q.b. sliced hard-boiled eggs

Preparation (7 steps)

Prepare herbs

If fresh herbs are used, clean them thoroughly by removing dry leaves and stem ends. Then wash the herbs several times in a bowl of water to remove any dirt.

Cook herbs

5 min/212°F/Speed 1 100

Put the prepared herbs together with plenty of coarse salt into the mixing bowl. Add 500 ml water and cook for 5 Min./100°C/speed 1. If using frozen herbs, observe the cooking time indicated on the packaging.

Drain and squeeze out herbs

Pour the cooked herbs into a sieve and squeeze well to remove excess water. This is important so that the crostini do not become too moist.

Chop garlic

Thermomix® Setting
3 sec/Speed 7

Put half the garlic clove into the mixing bowl and chop for 3 sec./speed 7. If necessary, use the spatula to push down from the edge.

Refine herbs

Thermomix® Setting
10 sec/Speed 4

Put the squeezed herbs, a pinch of chili pepper (optional) and extra virgin olive oil to taste into the mixing bowl. Mix for 10 sec./speed 4. Season with salt.

Top baguette

Spread the baguette slices with the herb mixture. Then top with diced mozzarella, crumbled sausage, anchovy fillets and sliced hard-boiled eggs.

Bake crostini

Spread the topped baguette slices on a baking sheet and bake in a preheated oven at 180°C top/bottom heat for about 10 minutes until the cheese has melted and is lightly browned.
