Description

This spelt carrot bread is a hearty and aromatic bread that I particularly enjoy baking when it gets colder outside. The carrots give the bread a slight sweetness and a juicy consistency, while spelt flour provides a nutty flavor. Sesame seeds and sunflower seeds give the bread an extra crunch. It is super easy to prepare and tastes great both pure and with savory spreads or cheese. Perfect for a cozy breakfast or as a side dish for dinner. A great recipe that even baking beginners can master!

Ingredients (10 ingredients)

  • Butter
  • 2 tbsp Oat flakes
  • 1 Carrot
  • 500 ml Water - lukewarm
  • 0.5 cube Yeast
  • 500 g Spelt flour - Type 630
  • 80 g Sesame
  • 40 g Sunflower seeds
  • 1 tbsp Salt
  • 2 tbsp Apple vinegar - or Balsamic vinegar

Preparation (5 steps)

Prepare loaf pan

Grease a loaf pan (30 cm) with butter and sprinkle with oat flakes. Peel the carrot and cut into pieces in the mixing bowl. Chop 5 sec./speed 5 and transfer.

Dissolve yeast

Add 500 ml lukewarm water and 1/2 cube of yeast to the mixing bowl and dissolve 2 min./37°C/speed 2.

Prepare dough

Thermomix® Setting
3 min/Kneading speed

Add 500 g spelt flour, 80 g sesame seeds, 40 g sunflower seeds, 1 tbsp salt, 2 tbsp apple cider vinegar and the chopped carrots and process into a dough for 3 min./kneading stage.

Fill dough in mold

Pour the very liquid dough into the prepared loaf pan.

Bake bread

Place the mold in the cold oven and bake the spelt bread at 200 degrees top/bottom heat for approx. 60 minutes. If the bread is still too soft, simply take it out of the mold and put it back in the oven for a short time.
