Description

This potato-carrot mash is a wonderfully simple and satisfying dish that tastes especially good in the colder months. I like to make it when I need to be quick and still want something warm and hearty on the table. The sweetness of the carrots harmonizes perfectly with the floury potatoes. With a hint of nutmeg and fresh parsley, the mash becomes a real comfort food. If you like, you can render some smoked bacon and add it. A great dish for the whole family!

Ingredients (10 ingredients)

  • 800 g Carrots
  • 800 g Potatoes - floury
  • 1 piece Onion
  • 2 tbsp Butter
  • 400 ml Vegetable broth
  • to taste Salt
  • to taste Pepper
  • to taste Nutmeg
  • 2 tbsp Chopped parsley
  • 150 g Cream

Preparation (6 steps)

Chop onion

Peel the onion, quarter it and put it into the mixing bowl. Chop for 3 sec./speed 5.

Sauté onion

Thermomix® Setting

Add the butter to the mixing bowl and sauté the onion for 3 min./120°C/speed 1.

Prepare carrots and potatoes

Peel the carrots and potatoes, roughly chop and add to the mixing bowl.

Add vegetable broth and cook

Thermomix® Setting
20 min/212°F/Speed 1 100

Add the vegetable broth to the mixing bowl and cook everything for 20 min./100°C/speed 1.

Season and add parsley

Season with salt, pepper and nutmeg. Add the chopped parsley.

Add cream and mash

Thermomix® Setting
10 sec/Speed 4

Add the cream and stir everything in for 10 sec./speed 4. Then push down with the spatula and mash for 10 sec./speed 4.
