This rustic of potatoes with bacon and onions is a dish that brings me back to the flavors of my childhood. Preparation of the potatoes

Peel the potatoes and slice them thinly with a mandoline or a knife. Transfer the sliced potatoes to a bowl.

Preparation of the bacon and onions

Slice the bacon into thin strips. Peel the onions and slice them thinly. Combine the bacon and onions in a bowl.

Layering the ingredients

Butter an ovenproof dish. Layer the potatoes, bacon and onions in the baking dish, adding flakes of butter and a pinch of salt from time to time. Continue in this way until all the ingredients are used up.

Baking in the oven

Cover the baking dish with a sheet of aluminum foil and bake in a preheated oven at 190°C for 60 minutes. Remove the aluminum foil and continue cooking for another 15 minutes, or until the potatoes are golden brown and tender.
