Description

This Bundt cake with mascarpone swirl is a delicious cake, perfect for coffee parties or birthdays. The cake consists of a juicy chocolate dough, which is refined with a creamy mascarpone filling.   • 4 Stück Eggs (M)
  • 180 g Sugar
  • 1 Päckchen Vanilla sugar
  • 150 ml Neutral oil
  • 120 ml Milk
  • 250 g Flour
  • 40 g Baking cocoa
  • 1 Päckchen Baking powder
  • 1 Prise Salt
  • 250 g Mascarpone
  • 60 g Powdered sugar
  • 1 Stück Egg
  • 1 EL Espresso (cooled)
  • 2 EL Espresso (cooled)
  • Vanilla
  • Cocoa powder

Preparation (10 steps)

Preheat oven and prepare pan

Preheat the oven to 175°C top/bottom heat. Grease a Bundt cake pan (24 cm diameter) well and dust with flour.

Beat eggs, sugar and vanilla sugar

Put 4 eggs (M), 180 g sugar and 1 packet of vanilla sugar in the mixing bowl and beat for 3 min./speed 4 until creamy.

Stir in oil and milk

Add 150 ml neutral oil and 120 ml milk and stir in for 20 sec./speed 3.

Mix flour, cocoa, baking powder and salt

Mix 250 g flour, 40 g baking cocoa, 1 packet of baking powder and 1 pinch of salt in a separate bowl.

Fold in dry ingredients

Add the flour mixture to the batter in the mixing bowl and briefly fold in for 30 sec./speed 3. Use the Meistermix Patix dough knife.

Prepare mascarpone swirl

Put 250 g mascarpone, 60 g powdered sugar and 1 egg (optionally 1-2 tablespoons of espresso or vanilla) in the mixing bowl and stir until smooth for 30 sec./speed 3.

Layer dough and mascarpone cream

Pour 2/3 of the chocolate dough into the Bundt cake pan. Spread the mascarpone cream on top. Pour the remaining dough over it and lightly pull with a fork (swirl).

Baking

Bake the Bundt cake in the preheated oven for 50-55 minutes (stick test).

Let cool

Let the Bundt cake rest in the pan for 10 minutes, then turn it out and let it cool.

Dust the cooled Bundt cake with cocoa powder.
