Description

These pancakes with strawberries and ice cream are an absolute delight! I especially like to make them in the spring when the strawberries are fresh and juicy. The combination of warm pancakes, sweet strawberries and creamy vanilla ice cream is simply unbeatable. A touch of bitter almond aroma and the crunchy pistachios round it all off perfectly. The recipe is easy to prepare and is ideal as a dessert or sweet main course for a special occasion. The strawberries soak in the liqueur, which gives them a great aroma.

Ingredients (13 ingredients)

  • 500 g Strawberries
  • 2 tbsp Sugar
  • 2 tbsp Strawberry liqueur
  • 250 g Flour
  • 0.4 l Milk
  • 2 tbsp Sparkling water
  • 4 piece Eggs (size M)
  • 1 pinch Salt
  • 4 tbsp Ground pistachios
  • 1 einige Bitter almond aroma
  • 40 g Butter or margarine
  • 2 tbsp Icing sugar
  • 4 piece Vanilla ice cream (approx. 70 g each)

Preparation (4 steps)

Prepare strawberries

Wash, clean and cut 500 g of strawberries into small pieces. Place in a bowl, mix with 2 tbsp of sugar and 2 tbsp of strawberry liqueur and leave to soak for approx. 30 minutes.

Prepare dough

Thermomix® Setting
20 sec/Speed 4

Put 250 g flour, 0.4 l milk, 2 tbsp sparkling water, 4 eggs (size M), a pinch of salt, 3 tbsp ground pistachios and a few drops of bitter almond aroma into the mixing bowl and mix for 20 sec/speed 4.

Bake pancakes

Melt 40 g of butter or margarine in a pan over medium heat. Add some batter to the pan and bake a wafer-thin pancake until golden brown. Turn over in between. Repeat this process until all the batter has been used up. This should make approx. 8 pancakes.

Arrange and serve

Place one pancake on a plate, top with strawberries and a scoop of vanilla ice cream. Dust with 2 tbsp icing sugar and sprinkle with the remaining ground pistachios.
