Description

This hearty meat broth is a real treat for cold days! With tender chicken, beef and veal, aromatic vegetables and a touch of white wine, it becomes a warming and satisfying dish. Preparing it in the Thermomix® is very easy and saves time. The broth is made particularly delicious by the crispy bread croutons with cheese, which are added before serving. A great dish for a festive dinner or just to treat yourself. The broth can also be prepared well in advance and frozen in portions.

Ingredients (13 ingredients)

  • 2 piece Chicken legs
  • 2 piece Chicken breasts
  • 250 g Beef brisket
  • 250 g Veal brisket
  • 1 piece Onion(s)
  • 2 piece Carrot(s)
  • 1 piece small Celeriac
  • 1 Zweig/e Rosemary
  • 2 tbsp Olive oil
  • 2 Nelke(n) Clove(s)
  • 0.5 Glas Wine white, dry
  • 50 g Clarified butter
  • 4 Scheibe/n Salt 4 slice/s

Preparation (6 steps)

Prepare meat and vegetables

Add 1.5 l water to the mixing bowl. Quarter 1 onion, 2 carrots and 1 small celeriac and add to the mixing bowl together with 2 chicken legs, 2 chicken breasts, 250 g beef brisket, 250 g veal brisket and 2 cloves.

Cook broth

Thermomix® Setting
45 min/212°F/Speed 1 100

Close the mixing bowl and cook everything for 45 min./100°C/speed 1.

Fry chicken breast

Cut the chicken breasts into small cubes. Heat 2 tbsp olive oil and 50 g clarified butter in a pan. Fry the chicken breast cubes in it together with 1 sprig of rosemary. Deglaze with 0.5 glass of white wine and let it cook for about 5 minutes over high heat. Then add to the broth in the mixing bowl.

Complete broth

Close the mixing bowl again and cook everything for another 45 min./100°C/speed 1.

Remove meat and vegetables

Remove the beef, veal and chicken legs from the broth and set aside. Also remove the vegetables from the broth.

Serve soup

Place 4 slices of toasted bread in preheated plates, sprinkle with cheese and pour over the hot soup. Season with salt.
