Description

This hearty cabbage strudel is a wonderful dish for the colder days. The white cabbage is processed with onions, caraway seeds and a light sweetness into an aromatic filling. I especially like to make it in the autumn, when the cabbage comes fresh from the field. The strudel is not only vegetarian, but can also be prepared well in advance. The fresh herb dip with cress and chives perfectly rounds off the dish and provides a fresh note. An absolute must for all cabbage lovers!

Ingredients (15 ingredients)

  • 1 kg White cabbage
  • 3 piece Onions
  • 4 tbsp Rapeseed oil
  • 3 tbsp Sunflower seeds
  • 1 tbsp Tomato paste
  • 1 tbsp Sugar
  • 200 ml Vegetable broth
  • to taste Salt
  • to taste Pepper
  • 1 tbsp Caraway, ground
  • 1 Pck. Strudel dough
  • 2 tbsp Soy cream
  • 1 tbsp Cress
  • 1 tbsp Chives
  • 100 g Creme Vega

Preparation (5 steps)

Prepare cabbage and onions

Thermomix® Setting
5 sec/Speed 4, 3 sec/Speed 5

Quarter the white cabbage, remove the stalk and place in the mixing bowl. Chop for 5 sec./speed 4. Peel and quarter the onions and add to the mixing bowl. Chop for 3 sec./speed 5.

Sauté cabbage

Thermomix® Setting

Add 2 tbsp rapeseed oil and sauté for 3 min./120°C/speed 1.

Simmer cabbage

Thermomix® Setting
20 min/212°F/Linkslauf Speed 1 100 Reverse

Add sunflower seeds, tomato paste, sugar, vegetable broth, salt, pepper and caraway and simmer for 20 min./100°C/reverse rotation speed 1.

Prepare herb dip

Thermomix® Setting
10 sec/Speed 3

Finely chop cress and chives. Add 2/3 of the herbs, Creme Vega, salt and pepper to the mixing bowl and mix for 10 sec./speed 3.

Top and bake strudel

Preheat oven to 200 °C top/bottom heat. Place strudel dough offset on top of each other and brush with the remaining oil. Spread cabbage on half of the dough, leaving a border of approx. 5 cm free. Fold in the sides and then roll up. Turn the end down and brush the surface with soy cream and sprinkle with caraway. Bake strudel for approx. 20 minutes.
