Description

This saffron rice dish with chicken and chorizo is an absolute culinary delight! I like to make it when I need something quick, but still want something special on the table. The rice becomes wonderfully aromatic thanks to the saffron and gets a great colour. The combination of tender chicken, spicy chorizo and crunchy vegetables is simply unbeatable. Perfect for a relaxed lunch or a cosy dinner with friends. You can also prepare the dish really well and then finish it off just before serving. You absolutely have to try it!

Ingredients (10 ingredients)

  • 350 g Chicken breast
  • 8 slice Chorizo
  • 1 can Red pepper(s)
  • 100 g Peas (frozen)
  • 1 piece Onion(s)
  • 350 grain Long grain rice
  • 2 dosette Saffron
  • 3 c. à soupe Olive oil
  • Salt
  • Pepper

Preparation (8 steps)

Chop onion

Thermomix® Setting

Peel and quarter an onion and place in the mixing bowl. Chop for 3 seconds/speed 5.

Sauté onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 tablespoon of oil and sauté for 3 min./120°C/speed 1.

Add rice and saffron

Add 350 g rice, 2 pinches of saffron and twice the amount of water (700 ml). Season with salt.

Cook rice

Thermomix® Setting
15 min/212°F/Speed 1 100

Close the mixing bowl and cook for 15 min./100°C/speed 1.

Fry chicken

While the rice is cooking, cut 350 g of chicken breast into strips and fry in a pan with the remaining oil (2 tablespoons) over high heat for about 5 minutes. Season with salt and pepper.

Sauté peppers

Remove the chicken from the pan and sauté 1 can of red peppers (cut into strips) in the same pan for 2 minutes.

Add ingredients to rice

After approx. 7 minutes of rice cooking time (i.e. halfway through the cooking time), add the fried chicken, peppers, 100 g frozen peas and 8 slices of chorizo (peeled and halved) to the mixing bowl.

Finish cooking

8 min/212°F/Speed 1 100

Close the mixing bowl again and finish cooking for the remaining 8 minutes/100°C/speed 1. If necessary, add a little more water if the rice is too dry.
