Description

This asparagus salad with apple is a real harbinger of spring! The crunchy green asparagus harmonizes wonderfully with the sweetness of the apple and the fresh blueberries. A light dressing of white wine vinegar and honey rounds off the dish perfectly. I love serving this salad as a light meal or as a side dish for grilling. It is quick to prepare and tastes simply delicious! If you like, you can add a few roasted nuts for extra crunch. An absolute favorite recipe for the warm season!

Ingredients (12 ingredients)

  • 0.5 piece Lettuce
  • 50 g Arugula
  • 5 piece Cherry tomatoes
  • 50 g Blueberries
  • 0.5 piece Apple
  • 10 Stange/n Asparagus, green
  • 1 tbsp Oil for frying
  • 2 tbsp White wine vinegar
  • 4 tbsp Oil
  • 1 tsp Honey
  • 1 Prise/n Salt
  • 1 Prise/n Pepper

Preparation (7 steps)

Prepare lettuce and arugula

Wash the lettuce, tear into bite-sized pieces and distribute on two plates together with the arugula.

Add tomatoes and blueberries

Quarter the cherry tomatoes and distribute on the green salad layer together with the blueberries.

Prepare apple and asparagus

Cut the apple into thin slices. Wash the asparagus and cut off the ends.

Fry apple and asparagus

Heat 1 tbsp oil in a pan. Briefly fry the apple pieces and asparagus in it until they are lightly browned.

Distribute apple and asparagus on the salad

Distribute the fried apple pieces and asparagus spears on the prepared plates.

Prepare vinaigrette

Thermomix® Setting
10 sec/Speed 3

Put 2 tbsp white wine vinegar, 4 tbsp oil, 1 tsp honey, 1 pinch salt and 1 pinch pepper into the mixing bowl and mix for 10 sec./speed 3.

Arrange the salad

Drizzle the vinaigrette over the apple and asparagus salad just before serving.
