Description

This Chinese cabbage salad is a wonderful combination of crunchy vegetables, sweet pineapple and savory bacon. I especially like to make it when I need something quick and still want to put something special on the table. The mung bean and soybean sprouts add a fresh touch, while the cashews provide a great crunch. The sweet and sour Asian sauce rounds it all off perfectly. Ideal for a light lunch or as a side dish for grilling. Can also be prepared well in advance!

Ingredients (12 ingredients)

  • 150 g Mung and Soybean Sprouts
  • 250 g Celery
  • Salt
  • Pepper
  • Chili Powder
  • 50 g Cashews
  • 96 g Bacon
  • 150 ml Asian Sauce (Sweet and Sour)
  • 6 tbsp Vinegar
  • 5 tbsp Oil
  • 0.5 piece fresh Pineapple or 1 can of Pineapple
  • 750 g Chinese Cabbage

Preparation (7 steps)

Prepare celery and sprouts

Thermomix® Setting
3 min/212°F/Speed 1 100

Cut 250 g celery into pieces and place in the mixing bowl. Add 150 ml water and a pinch of salt. Cook for 2 min./100°C/speed 1. Add 150 g mung and soybean sprouts and cook for another 1 min./100°C/speed 1. Then drain in a sieve.

Roast cashews

Thermomix® Setting
3 min/248°F/Speed 1 120

Put 50 g cashews in the mixing bowl and roast for 3 min./120°C/speed 1 without the lid. Then remove and set aside.

Prepare dressing

Thermomix® Setting
40 sec/Speed 3

Put 150 ml Asian sauce, 6 tbsp vinegar, salt, pepper and some chili powder in the mixing bowl. Mix for 20 sec./speed 3. Then slowly add 4-5 tbsp oil through the lid opening while stirring (20 sec./speed 3).

Prepare pineapple

Peel ½ fresh pineapple (or 1 can of pineapple), quarter it and remove the core. Cut the pineapple into small pieces.

Cut Chinese cabbage

Clean, wash, quarter and cut 1 small Chinese cabbage (approx. 750 g) into strips.

Mix salad

Put the prepared celery, sprouts, pineapple and Chinese cabbage in a large bowl. Add the dressing and roasted cashews and mix well.

Fry bacon and arrange salad

Fry 8 slices of bacon (approx. 96 g) in a pan until crispy. Arrange the salad and spread the bacon over it. Garnish with pineapple slices and herbs as desired.
