Description

This couscous salad is an absolute highlight in spring! The tender couscous harmonizes wonderfully with the crisp green asparagus and sweet peas. A touch of lime and chili provides a fresh, slightly spicy note. I love how quick and easy this salad is to prepare - perfect when you need something quick or for a picnic in the countryside. The roasted sunflower seeds add an extra crunch to the whole thing. A great dish that is also great to prepare in advance!

Ingredients (15 ingredients)

  • 150 g Couscous (pre-cooked wheat semolina)
  • 300 ml Vegetable broth
  • 1 piece Bay leaf
  • 500 g Asparagus (green)
  • 1 clove Garlic
  • 2 tbsp Butter
  • 6 tbsp Olive oil
  • Salt
  • Pepper
  • Nutmeg (freshly grated)
  • 150 g Peas (frozen)
  • 2 piece Limes
  • 1 piece Chili pepper (small, red)
  • 1 tsp Honey (liquid)
  • 3 tbsp Sunflower seeds

Preparation (7 steps)

Prepare vegetable broth and let couscous soak

Thermomix® Setting
5 min/212°F/Speed 1 100

Add 300 ml vegetable broth and 1 bay leaf to the mixing bowl and bring to a boil for 5 Min./100°C/Stufe 1. Place 150 g couscous in a sieve and rinse with lukewarm water. Sprinkle the couscous into the mixing bowl. Remove the mixing bowl from the base and let the couscous soak, covered, until it has absorbed all the liquid (approx. 20 minutes).

Prepare asparagus and chop garlic

In the meantime, peel 500 g asparagus in the lower third, and cut off any dried or woody ends. Peel 1 clove of garlic and cut into slices.

Steam asparagus and peas

Heat 2 tbsp butter and 2 tbsp oil in a pan. Sauté garlic in it, cut asparagus into pieces and add. Season with a little salt, a little pepper and a little nutmeg (freshly grated). Cover and steam over low heat until slightly firm to the bite. Add peas after about 4 minutes of steaming and cook with them.

Loosen couscous and prepare dressing

In the meantime, loosen the couscous with a fork and place in a bowl. Squeeze out 2 limes. Clean and finely chop 1 chili pepper. Mix with lime juice, remaining oil, a little salt, a little pepper and 1 tsp honey (liquid), season vigorously and mix with the couscous and let it soak in.

Roast sunflower seeds

Roast 3 tbsp sunflower seeds in a pan without additional fat. Place on a plate and let cool.

Mix salad and let soak

Mix asparagus, peas and half under the couscous. Let it soak and cool for another 20 minutes.

Season and serve

Season the couscous again before serving. Serve sprinkled with sunflower seeds and remaining herbs.
