Description

This fruity salad with homemade ice cream cubes is a real eye-catcher and tastes simply delicious! I especially like to make it in the summer when there is a lot of fresh fruit. The combination of sweet and sour fruits, paired with the creamy ice cubes, is simply unbeatable. The preparation is a bit time-consuming, but it's definitely worth it! The salad can also be prepared well in advance and the ice cubes can be frozen the day before. A shot of Gin in the fruit sauce provides that certain something. If you like, you can drizzle some honey over it.

Ingredients (11 ingredients)

  • 300 g Whipped cream
  • 150 g Cold sweetened condensed milk
  • 100 g Ground pistachios
  • 2 piece Oranges (1 organic)
  • 0.5 piece Pineapple
  • 2 piece Pink grapefruits
  • 4 piece Kiwis
  • 4 tbsp Gin
  • 2 tbsp Pistachios (without shell)
  • 3 Stiele Mint
  • Liquid honey

Preparation (8 steps)

Whip cream and condensed milk until stiff

Put 300 g whipped cream and 150 g cold sweetened condensed milk into the mixing bowl. Insert the butterfly and whip until stiff for 2 min./speed 3.5. Remove the butterfly.

Prepare pistachio ice cream

Thermomix® Setting
10 sec/Speed 8

Pour half of the stiff whipped cream into a separate bowl. Add 100 g ground pistachios to the mixing bowl and chop for 10 sec./speed 8. Add the chopped pistachios to the cream in the bowl and carefully fold in.

Fill ice cube molds and freeze

Fill the light cream and the pistachio cream into ice cube trays. Cover and freeze for at least 5 hours, preferably overnight.

Grate orange peel

Wash an organic orange in hot water and rub off the peel with a fine grater. Set aside the grated peel.

Prepare fruit

Peel pineapple, grapefruits, kiwis and oranges. Cut out the hard core of the pineapple. Cut the fruit into approximately equal-sized cubes (size of the ice cubes).

Prepare fruit sauce

Thermomix® Setting
20 sec/Speed 8

Put the fruit trimmings into the mixing bowl. Add 4 tbsp Gin and the grated orange peel. Puree for 20 sec./speed 8. If desired, strain the sauce through a sieve to obtain a finer consistency.

Chop pistachios and cut mint

Coarsely chop 2 tbsp pistachios (without shell). Wash the mint and finely chop some of the leaves.

Arrange

Press the milk cream and pistachio ice cubes out of the ice cube trays. Arrange the fruit cubes on a plate. Distribute the ice cubes in between. Sprinkle with chopped pistachios and chopped mint. Serve with the fruit sauce. Drizzle with liquid honey if desired.
