Description

This salmon fennel salad with spelt is a light yet filling dish that is perfect for warm days. The nutty spelt harmonizes wonderfully with the tender salmon and the slightly sweet fennel. The fresh lime vinaigrette gives the salad a tangy note. I love how quickly this salad is prepared and how well it can be prepared in advance. Ideal for a relaxed lunch or a light dinner. If you like, you can add a few roasted nuts for extra crunch. An absolute favorite recipe of mine!

Ingredients (9 ingredients)

  • 200 g pre-cooked spelt
  • to taste Salt
  • 4 piece Salmon fillets
  • 120 g Arugula
  • 300 g Fennel
  • 2 piece Organic limes
  • to taste Pepper
  • 7 tbsp Olive oil
  • 1 Beet Daikon cress

Preparation (9 steps)

Prepare spelt

Thermomix® Setting
20 min/212°F/Speed 1 100

Put 200 g pre-cooked spelt into the mixing bowl and cook according to package instructions with salt water for 20 Min./100°C/Stufe 1. Then pour into a sieve and drain well.

Prepare salmon

Wash 4 salmon fillets (approx. 120 g each), pat dry and season with salt. Set aside.

Prepare arugula

Wash 100 g arugula and shake dry. Set aside.

Prepare fennel

Wash 300 g fennel and cut into thin slices. Roughly chop fennel greens. Set both aside.

Prepare limes

Wash 2 organic limes in hot water. Cut 1 lime into slices. Grate the zest from the second lime, halve the fruit and squeeze out the juice. Set aside.

Prepare spelt dressing

Thermomix® Setting
10 sec/Speed 3

Put the cooled spelt in a bowl. Mix with salt, pepper, lime juice, lime zest and 4 tbsp olive oil and season to taste. Stir for 10 Sek./Stufe 3.

Fry salmon

Heat 1 tbsp oil in a pan. Fry the fish in it for about 1 minute on each side. Reduce heat. Continue cooking the fish covered for about 4 minutes.

Fry fennel

Heat 2 tbsp oil in a second pan. Fry the fennel in it for about 4 minutes. Season with salt and pepper. Add lime slices after about 3 minutes.

Arrange salad

Mix arugula and spelt, arrange with fennel and fish. Garnish with fennel greens and daikon cress.
