This salad is a real hit! The combination of crunchy romaine lettuce, sweet cranberries, salty cashews and savory Parmesan is simply unbeatable. The dressing with garlic, mustard and honey rounds it off perfectly. I like to make this salad when I need something quick or when I have guests. It is super easy to prepare and tastes simply delicious. Perfect for barbecue season or as a light meal in between. An absolute favorite recipe!

Ingredients (8 ingredients)

  • 3 piece Lettuce heart(s) of romaine lettuce
  • 200 g Cashew nuts
  • 125 g Cranberries
  • 75 g Parmesan grated
  • 1 clove Garlic clove(s) crushed
  • Vinegar oil
  • 1 tsp Mustard
  • 1 tsp Honey

Preparation (4 steps)

Chop garlic

Put 1 clove of garlic in the mixing bowl and chop for 3 seconds/speed 7. Scrape down the edge with the spatula.

Prepare salad

Chop, wash and spin dry 3 lettuce hearts from the romaine lettuce. Put in a large bowl.

Mix salad

Add 200 g cashews, 125 g cranberries and 75 g grated Parmesan to the salad in the bowl. Pour the prepared dressing over it and mix everything well.

This salad is a real hit with our family, especially in summer. I originally discovered it in a slightly modified form on an American blog and have refined it over the years until it was the way we like it best. I thought the idea of combining sweet cranberries with salty cashews and savory Parmesan was ingenious from the start. The heart of this salad is of course the romaine lettuce. It brings a pleasant crunchiness and freshness that contrasts with the other ingredients. Make sure to use really fresh lettuce hearts that have no brown spots. The cashews provide a nutty flavor and a pleasant bite. I prefer to use unsalted, roasted cashews, as they have a more intense aroma. The cranberries contribute a fruity sweetness and a slightly sour note that wonderfully balances the salad. Dried cranberries are ideal here as they don't release as much moisture. The Parmesan, preferably freshly grated, brings a spicy, salty component into play. It rounds off the taste and provides a certain depth. The preparation with the Thermomix® is very simple. First, the garlic is finely chopped, which is done in a flash in the Thermomix®. Be careful not to chop the garlic for too long, otherwise it can become bitter. Then the dressing is prepared. It is important to use high-quality ingredients here. A good olive oil, an aromatic vinegar (I like balsamic or apple cider vinegar), a good mustard and a spoonful of honey make a harmonious dressing. The Thermomix® perfectly mixes everything into a creamy emulsion. When mixing the salad, it is important to proceed carefully so that the salad does not collapse. It is best to use two salad servers or your hands. For a vegetarian version, you can simply omit the Parmesan or replace it with a vegan hard cheese. To make the salad vegan, you must also replace the honey in the dressing with maple syrup or agave syrup. Feel free to experiment with other spices. A pinch of chili or smoked paprika powder in the dressing gives the salad an interesting note. Fresh herbs such as parsley or chives also go perfectly with it. The salad is ideal as a side dish for grilling, fish or meat. But it can also be served as a light meal in between. A piece of baguette or ciabatta goes well with it. The salad tastes best when it is freshly prepared. However, the dressing can be prepared well in advance and stored in the refrigerator. The remaining ingredients should only be added shortly before serving so that the salad remains crisp. If you want to store the salad for longer, you should store it without dressing and add it shortly before serving.
