Description

This refreshing herb-tomato salad is an absolute highlight on warm days! I love how the fresh mint and lemon juice give the salad a special touch. The crunchy cucumbers, juicy tomatoes, and aromatic spring onions harmonize perfectly with each other. The salad is super quick to prepare and goes perfectly with falafel or pita bread. A great dish for a light lunch, as a side dish for grilling, or simply as a healthy snack in between. And the best part: it's also vegan and gluten-free!

Ingredients (11 ingredients)

  • 4 piece Cucumber(s)
  • 3 piece Tomato(es)
  • 5 piece Spring onion(s)
  • 1 piece Bell pepper(s)
  • 45 g Garlic
  • 60 g Parsley
  • 15 g Mint
  • 120 ml Olive oil
  • 2 tbsp Lemon juice
  • 1 tbsp Salt
  • 1 tbsp Pepper

Preparation (3 steps)

Chop herbs and garlic

Thermomix® Setting
3 sec/Speed 7, 3 sec/Speed 5

Add 45 g of garlic to the mixing bowl and chop for 3 sec./speed 7. Then add 60 g of parsley and 15 g of mint and chop for another 3 sec./speed 5. Transfer everything and set aside.

Prepare vegetables

Core 4 cucumbers, 3 tomatoes and 1 bell pepper and cut into bite-sized pieces. Cut 5 spring onions into fine rings. Put everything in a large bowl.

Prepare dressing and mix salad

Add the chopped herbs and garlic, the cut cucumbers, tomatoes, bell peppers and spring onions to the bowl. Add 120 ml of olive oil, 2 tbsp of lemon juice, 1 tbsp of salt and 1 tbsp of pepper. Mix everything carefully.
