Description

This recipe for homemade salt pretzels (Perece) is a traditional pastry that is prepared with the Thermomix®. The dough is kneaded from flour, yeast, milk, butter and sugar and, after rising, formed into pretzels. After the first baking, the pretzels are covered with a salty glaze and baked until done. Ideal as a hearty snack or for brunch.

Ingredients (10 ingredients)

  • 600 g Flour (Type 400, smooth/soft)
  • 350 ml Liquid (mixture of water and milk, half and half)
  • 20 g Fresh yeast
  • 20 g Sugar
  • 10 g Salt
  • 80 g Melted butter or margarine
  • 1 Stück Egg yolk
  • 0.5 Tasse Water (for the salt glaze)
  • Flour (for the salt glaze)
  • 0.5 TL Salt (for the salt glaze)

Prepare yeast

Add 350 ml lukewarm liquid (mixture of water and milk) together with 20 g fresh yeast and 20 g sugar to the mixing bowl and stir for 2 min./37°C/speed 2.

Prepare dough

Add 600 g flour, 10 g salt and 80 g melted butter or margarine to the mixing bowl with the remaining ingredients and knead for 3 min./kneading setting.

Let the dough rise

Remove the dough from the mixing bowl, place in a bowl and cover and let rise in a warm place until it has clearly increased in volume (approx. 60 minutes).

Shape pretzels

Divide the risen dough into 15 equal parts. Form each part into a long roll and form a pretzel from it. Place the shaped pretzels on a baking sheet lined with baking paper.

Prepare salt glaze

Mix 1/2 small cup of cold water, 1/2 tsp salt and flour as needed (until the consistency is like pancake batter) in a bowl.

Bake pretzels (first run)

Brush the pretzels with 1 egg yolk and bake in a preheated oven at 200 °C for approx. 10–15 minutes until they start to take on a very light golden brown color.

Apply salt glaze and bake until done

Remove the pretzels from the oven, drizzle with the salty glaze (usually in zigzag lines) and put them back in the oven. Bake to the end until they are nicely golden brown and crispy (approx. 5-10 minutes).
