Description

This recipe for salmon in orange sauce is a simple and festive main course that is ready in about 30 minutes. The combination of fresh orange juice, cream and a hint of mustard gives the salmon a special touch. Ideal for a quick dinner or a special lunch.

Ingredients (12 ingredients)

  • 1 Stück Onion, small
  • 1 Zehe Garlic
  • 20 g Olive oil
  • 250 ml Freshly squeezed orange juice
  • 100 ml Vegetable broth
  • 50 g Cream
  • 1 TL Cornstarch
  • 0.5 TL Mustard
  • 0.5 TL Honey
  • 1 Prise Salt
  • 1 Prise Pepper
  • 600 g Salmon fillet (4 pieces of approx. 150 g each)

Preparation (8 steps)

Chop onion and garlic

Peel and quarter 1 small onion and place 1 clove of garlic in the mixing bowl and chop for 3 sec./speed 5.

Sauté onion and garlic

Add 20 g of olive oil to the chopped onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add orange juice and vegetable broth

Add 250 ml of freshly squeezed orange juice and 100 ml of vegetable broth to the onions and garlic in the mixing bowl.

Simmer sauce

10 min/212°F/Speed 1 212°F

Simmer the mixture in the mixing bowl for 10 min./100°C/speed 1. Leave the measuring cup on.

Refine sauce

Add 50 g cream, 1 tsp cornstarch, 1/2 tsp mustard, 1/2 tsp honey, 1 pinch of salt and 1 pinch of pepper to the mixing bowl and stir for 5 sec./speed 3.

Finish sauce

Simmer the sauce for another 3 min./90°C/speed 1. Leave the measuring cup on.

Fry salmon

Fry 4 salmon fillets (approx. 150 g each) in a separate pan with a little oil until cooked.

Serve salmon in sauce

Add the fried salmon fillets to the orange sauce in the mixing bowl and gently fold in. Alternatively, pour the sauce over the salmon fillets on plates.
