Description

This salmon and zucchini dish is an explosion of fresh and Mediterranean flavors! I often prepare it when I have little time but want something tasty and healthy. The salmon, rich in omega-3, goes perfectly with the sweetness of the zucchini, all enriched by a touch of white wine and a pinch of chili pepper for a lively flavor. It is perfect for a light but satisfying dinner, ideal to enjoy on warm summer evenings. The preparation is very simple and quick, a real lifesaver when you are in a hurry! It can be served with a side of basmati rice or simply with a slice of wholemeal bread.

Ingredients (9 ingredients)

  • 500 g Fresh salmon
  • 400 g Zucchini
  • 50 ml White wine
  • 1 piece Onion
  • 1 pinch Chili pepper
  • 1 bunch Parsley
  • 1 clove Garlic
  • 3 tbsp Extra virgin olive oil
  • 1 pinch Salt

Preparation (6 steps)

Chop the onion

Peel an onion, cut it into quarters and put it in the bowl. Chop for 3 Sec./speed 5.

Sauté the onion

Thermomix® Setting

Add 3 tablespoons of extra virgin olive oil and sauté for 3 Min./120°C/speed 1.

Prepare the salmon

Remove the skin from about 500g of fresh salmon and cut it into cubes of about 2 cm. Rinse the salmon cubes under running water and set aside.

Prepare the zucchini

Wash about 400g of zucchini, remove the ends and cut them into cubes of about 2 cm.

Cook zucchini and salmon

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Add the cubed zucchini to the bowl and cook for 4 Min./100°C/speed 1. Then add the cubed salmon and cook for another 5 Min./100°C/reverse speed 1.

Flavor and finish cooking

Thermomix® Setting
3 min/212°F/Linkslauf Speed 1 100 Reverse

Add a pinch of chili pepper, a clove of minced garlic, a bunch of chopped parsley, 50ml of white wine and a pinch of salt. Cook for another 3 Min./100°C/reverse speed 1, without the measuring cup, to let the wine evaporate.
