  • 1 kg Meat (Beef or Game)
  • 2 Stück Onions
  • 200 g Celery
  • 200 g Carrots
  • 2 EL Oil
  • 2 EL Tomato paste
  • 250 ml Red wine, dry
  • 1 Liter Beef broth
  • 1 Stück Bay leaf
  • 1 TL Peppercorns
  • 5 Stück Juniper berries
  • 2 Stück Cloves
  • 1 Zweig Rosemary
  • 1 Zweig Thyme
  • 1 EL Sauce thickener, light
  • Salt
  • Pepper
  • Sugar

Prepare the vegetables

Peel and quarter the onions. Clean and roughly dice the celery. Peel and cut the carrots into coarse pieces.

Chop the vegetables

Deglaze with red wine

Thermomix® Setting

Deglaze with red wine and let it reduce for 1 min./100°C/speed 1 without the measuring cup.

Sear the meat

Sear the meat well on all sides in a separate pan.

Add meat and remaining ingredients

Add the meat, beef broth, bay leaf, peppercorns, juniper berries, cloves, rosemary, and thyme to the mixing bowl.

Simmer the sauce

Simmer for 30 min./100°C/speed 1. Leave the measuring cup on.

Strain the sauce

Remove the bay leaf. Strain the sauce through a sieve and return it to the mixing bowl.

Thicken the sauce

Stir in the sauce thickener and simmer for 3 min./100°C/speed 2. Leave the measuring cup on.

Season with salt and pepper and refine with a little sugar if necessary.
