Description

The potato and mushroom pan with steak strips is a protein-rich main course that is quick to prepare with the Thermomix®. Young potatoes, fresh mushrooms and tender sirloin steaks form the basis for this hearty dish. Refined with thyme and rosemary, a Mediterranean flavor is created. In just 45 minutes, of which 30 minutes are active working time, the food is ready for 3 servings. Ideal for lovers of hearty cuisine and as a filling family meal in autumn.

Ingredients (13 ingredients)

  • 750 g small young potatoes
  • 500 g small mushrooms
  • 600 g sirloin steaks
  • 8 Stiel(e) Thyme
  • 5 Zweige Rosemary
  • 50 g Clarified butter
  • Salt
  • Steak pepper
  • 1 Zehe Garlic
  • 1 keine Organic lemon
  • 200 g Greek yogurt
  • 50 g Salad cream
  • Pepper

Preparation (11 steps)

Prepare herbs

Wash the thyme and rosemary, shake dry and set aside some for garnish. Pluck the leaves and needles from the remaining stems and chop roughly. Set aside.

Chop garlic

Thermomix® Setting

Peel the garlic clove, put it in the mixing bowl and chop for 3 sec./speed 7. Scrape down the sides with the spatula.

Make lemon zest

Wash the lemon in hot water, pat dry and grate half of the lemon zest with a zester. Set aside.

Prepare yogurt sauce

Thermomix® Setting
10 sec/Speed 3

Put 200 g Greek yogurt, 50 g salad cream, the chopped garlic, half of the lemon zest and 1-2 tsp lemon juice into the mixing bowl and mix for 10 sec./speed 3. Season with salt and pepper and transfer to a bowl. Sprinkle with remaining lemon zest and pepper.

Prepare potatoes

Wash 750 g small young potatoes thoroughly, drain and, depending on their size, halve or quarter lengthwise. Set aside.

Prepare mushrooms

Clean 500 g small mushrooms. Set aside.

Sear steak

Cut 3 sirloin steaks (approx. 600 g) into strips. Heat 15 g clarified butter in a pan, briefly sear the steak strips in it while turning. Season with salt and steak pepper and remove from the pan.

Fry mushrooms

Add 15 g clarified butter to the hot pan and fry the mushrooms in it for 4-5 minutes while turning. Season with salt and steak pepper and remove from the pan.

Fry potatoes

Add 20 g clarified butter to the hot pan and add the potatoes. Cover and fry over medium heat for 10 minutes. Shake or swivel the pan in between to turn the potatoes.

Finish frying potatoes

After 10 minutes, season the potatoes with salt and steak pepper and fry without a lid for approx. 2 minutes until done.

Finalize the pan

Add the steak strips, mushrooms and chopped herbs to the potatoes in the pan and fry everything together for another 1-2 minutes. Add some garlic sauce to the finished pan and garnish with thyme and rosemary sprigs.
