Description

This chicken stir-fry with spinach and peanuts is a recipe that I often prepare when I need a quick and nutritious meal. The combination of tender chicken with fresh spinach and the crunchy touch of peanuts is simply delicious. It is a very versatile dish, perfect for a weekday meal or even to take to work. In addition, it is prepared in a short time and is an excellent way to incorporate vegetables into our diet. If you want to give it an extra touch, you can add a little soy sauce at the end. You will love it!

Ingredients (10 ingredients)

  • 200 gramos chicken
  • 200 gramos spinach
  • 100 gramos red onion
  • 1 clove garlic
  • 1 piece lemon
  • 1 pinch chicken seasoning
  • 30 gramos peanut or peanuts
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cucharada sopera olive oil

Preparation (7 steps)

Prepare the ingredients

Make sure you have all the ingredients ready and weighed: 200 grams of chicken, 200 grams of spinach, 100 grams of red onion, 1 clove of garlic, 1 lemon, chicken seasoning, 30 grams of peanuts, salt, pepper and olive oil.

Cut and season the chicken

Cut the chicken into small pieces. In a bowl, mix the chicken with a pinch of chicken seasoning, salt, pepper and the juice of half a lemon. Mix well so that the chicken is well seasoned.

Chop the onion and garlic

Put 100 grams of red onion in the glass and program 3 seconds/speed 5. Remove and reserve. Put 1 clove of garlic in the glass and program 3 seconds/speed 7. Remove and reserve.

Sauté the onion and garlic

Add 1 tablespoon of olive oil to the glass along with the chopped onion and garlic. Program 3 minutes/120°C/speed 1.

Add the chicken

Thermomix® Setting
5 min/Varoma/Speed 1/Giro a la izquierda Varoma Reverse

Add the seasoned chicken to the glass. Program 5 minutes/Varoma/speed 1/Reverse direction. The chicken will be steamed.

Incorporate the spinach

Thermomix® Setting
3 min/212°F/Speed 1/Giro a la izquierda 100 Reverse

Add the spinach (cut a little by hand) to the glass. Program 3 minutes/100°C/speed 1/Reverse direction. Correct salt and pepper if necessary.

Serve

Serve the chicken stir-fry with hot spinach and sprinkle the chopped peanuts on top. Squeeze the rest of the lemon over the plate before serving.
