Description

This chicken soup, inspired by the traditional Colombian Sancocho, is a true comfort food! The combination of yucca, plantain and red potatoes creates a rich consistency and an enveloping flavor. Put the shallot in the bowl and chop for 3 Sec./Stufe 5. Add a cup of chicken broth, cilantro and cumin. Cook for 5 Min./100°C/Stufe 1.

Let the mixture cool. Once cold, pour into the bowl and blend for 20 Sec./Stufe 8 until a smooth and homogeneous cream is obtained. Transfer to a bowl and set aside.

Pour the remaining chicken broth into the bowl. Add the chicken breasts cut into quarters and skinned. Cook for 60 Min./100°C/Stufe 1.

Add the cut and peeled yucca and the potatoes cut into pieces in the bowl. Cook for 30 Min./100°C/Stufe 1.

Adding the shallot and lemon mixture

Add the previously prepared shallot, cilantro and cumin mixture and the juice of 2 lemons in the bowl. Mix for 1 Min./Stufe 1/Linkslauf.

Add the flour and butter in the bowl. Set 3 Min./100°C/Stufe 2. Pour the roux into the soup and mix for 1 Min./Stufe 1/Linkslauf.

Check the cooking of the potatoes and yucca. Make sure they are cooked and soft. Also check a piece of chicken to check the degree of cooking. Adjust salt and pepper to taste. Serve hot.
