Description

These Rosemary Chicken Focaccia Sandwiches are a delightful and flavorful meal, perfect for a quick lunch or a casual gathering. I've been making these for years, and they're always a hit! The juicy chicken, infused with garlic and rosemary, pairs perfectly with the tangy Dijon mustard and creamy mayonnaise. The focaccia bread adds a wonderful texture and aroma. It's a simple yet satisfying recipe that's ready in under 30 minutes. Feel free to add some fresh lettuce or tomato slices for extra freshness. Enjoy!

Ingredients (8 ingredients)

  • 4 piece skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
  • ground black pepper
  • 1 tbsp olive oil
  • 1 tsp minced garlic
  • 2 tbsp mayonnaise
  • 2 tsp prepared Dijon-style mustard
  • 1 tsp chopped fresh rosemary
  • 8 slice garlic and rosemary focaccia bread

Preparation (6 steps)

Prepare the chicken

Sprinkle ground black pepper to taste on one side of each of the 4 skinless, boneless chicken breast halves (pounded to 1/4 inch thickness). Set aside.

Mince garlic

Add 1 teaspoon minced garlic to the mixing bowl and chop for 3 Sec./Stufe 7.

Sauté garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 tablespoon olive oil to the mixing bowl with the minced garlic and sauté for 3 Min./120°C/Stufe 1.

Cook the chicken

Heat oil in a large skillet; add chicken, pepper-side-down. Sauté chicken until cooked through and juices run clear, about 12 to 15 minutes. Remove from skillet and set aside.

Prepare the sauce

Thermomix® Setting
10 sec/Speed 3

In the mixing bowl, combine 2 tablespoons mayonnaise, 2 teaspoons prepared Dijon-style mustard, and 1 teaspoon chopped fresh rosemary. Mix for 10 Sec./Stufe 3.

Assemble the sandwiches

Spread the mayonnaise mixture on 4 slices of the 8 slices garlic and rosemary focaccia bread. Place 1 chicken cutlet on each of these slices, then top each with another bread slice. Serve immediately.
