Description

The hearty potato-mushroom-composition from the Thermomix® is a quick and inexpensive main course with potatoes, mushrooms, spring onions and diced bacon. The recipe is ideal for student cuisine and can be prepared vegetarian. In just 40 minutes, 4 servings are created. Perfect for anyone looking for an uncomplicated and satisfying meal.

Ingredients (10 ingredients)

  • 500 g Mushrooms
  • 2 Stück Spring onions
  • 1000 g Potatoes
  • 50 g Diced bacon
  • 2 EL Oil
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 250 ml Vegetable broth
  • 50 ml Dry white wine
  • 4 EL Grated Parmesan or vegetarian hard cheese

Preparation (9 steps)

Prepare Mushrooms

Clean 500 g mushrooms and halve them. Place in a bowl and set aside.

Chop Spring Onions

Clean 2 spring onions, wash, pat dry and put into the mixing bowl. Chop for 3 sec./speed 5. Place in a bowl and set aside.

Prepare Potatoes

Peel 1 kg potatoes, wash thoroughly, rub dry and cut into cubes. Place in a bowl and set aside.

Fry Diced Bacon

Render 50 g diced bacon in a pan without oil until crispy. Remove from the pan and set aside.

Fry Potatoes

Add 2 tbsp oil to the pan and heat. Fry the diced potatoes in it until golden brown. Season with salt and pepper. Remove from the pan and set aside.

Sauté Mushrooms and Spring Onions

Add the prepared mushrooms and spring onions to the pan and sauté. Season with salt and pepper.

Deglaze and Simmer

Add 250 ml vegetable broth and 50 ml dry white wine to the pan, bring to a boil and simmer briefly.

Stir in Parmesan

Stir 4 tbsp grated Parmesan or vegetarian hard cheese, except for some for garnish, into the potato-mushroom mixture.

Arrange and Serve

Arrange the potato pan on plates. Sprinkle with remaining Parmesan and serve.
