Description

This savory potato and asparagus sheet pan with goat cheese is a vegetarian main course that is quick and easy to prepare in the Thermomix®. In addition to potatoes and green asparagus, cherry tomatoes and thyme provide Mediterranean flavors. In just 40 minutes, including 20 minutes of active work, you can create a healthy and gluten-free dish for 2 servings. Ideal for light cuisine or as an uncomplicated family meal in the spring.

Ingredients (12 ingredients)

  • 1 Stück Garlic clove
  • 400 g Potatoes
  • 100 g Goat cheese - soft cheese
  • 2 EL Olive oil
  • 1 TL Dried thyme
  • 200 g Green asparagus
  • 200 g Cherry tomatoes
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 2 EL White wine vinegar
  • 1 EL Olive oil
  • 1 TL Honey

Preparation (10 steps)

Chop garlic

Thermomix® Setting
3 sec/Speed 7

Place 1 clove of garlic in the mixing bowl and chop for 3 sec/speed 7. Use the spatula to scrape down the sides.

Prepare potatoes

Peel 400 g potatoes and cut into wedges. Place the potato wedges in a bowl.

Season potatoes

Add the chopped garlic clove, 1 tbsp olive oil, salt, pepper and 1 tsp dried thyme to the potato wedges in the bowl and mix well.

Bake potatoes

Spread the seasoned potato wedges on a baking sheet lined with parchment paper and bake in a preheated oven at 180°C convection for 25 minutes. Turn once in between.

Prepare asparagus

In the meantime, remove the woody ends from the green asparagus (200 g) and halve the spears. Place the asparagus in a bowl.

Mix tomatoes and asparagus

Halve 200 g cherry tomatoes and add to the bowl along with the halved asparagus and the remaining olive oil (1 tbsp) and mix.

Bake asparagus and tomatoes

Add the asparagus and tomatoes to the potatoes on the baking sheet and bake for another 10 minutes.

Add goat cheese

Cut 100 g goat cheese (soft cheese) into small pieces and spread on the sheet pan. Bake everything for another 5 minutes, until the cheese is slightly melted.

Prepare dressing

Thermomix® Setting
10 sec/Speed 3

Place 2 tbsp white wine vinegar, 1 tbsp olive oil and 1 tsp honey in the mixing bowl and mix for 10 sec/speed 3. Season with salt and pepper.

Serve

Drizzle the potato and asparagus sheet pan with the dressing and serve.
