Description

This hearty cabbage and potato soup is a real comfort food that warms you up, especially in the cold season. I like to make it when I want to cook something hearty and simple. The combination of potatoes, savoy cabbage and carrots makes the soup nice and filling, and the spices give it a pleasant flavor. It is perfect for a quick lunch or a light dinner. If you like, you can sprinkle some fresh parsley on top. The soup can also be prepared well in advance and tastes almost even better when reheated! A dash of cream rounds off the dish.

Ingredients (13 ingredients)

  • 1 piece Onion
  • 2 clove Garlic
  • 700 g Potatoes (mainly waxy)
  • 700 g Savoy cabbage
  • 1 piece Carrot
  • 2 tbsp Sunflower oil
  • 1.5 l Vegetable broth
  • 1 piece Bay leaf
  • 1 tsp Thyme (dried)
  • Salt
  • Pepper
  • Sweet paprika powder
  • 150 ml Cream

Preparation (5 steps)

Chop onion and garlic

Put 1 peeled onion in the mixing bowl and chop for 3 sec./speed 5. Add 2 cloves of garlic and chop for 3 sec./speed 7. Use the spatula to push everything down from the edge.

Put 2 tbsp sunflower oil in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add potatoes, savoy cabbage and carrot

Add 700 g diced potatoes, 700 g savoy cabbage in pieces and 1 diced carrot to the mixing bowl and sauté for 2 min./100°C/speed 1.

Add 1.5 l vegetable broth, 1 bay leaf and 1 tsp thyme (dried). Season with salt, pepper and sweet paprika powder. Cook for 20 min./100°C/speed 1.

2 min/194°F/Speed 1 90 Reverse

Add 150 ml cream and stir in for 2 min./90°C/speed 1 reverse. Season with salt and pepper and serve.
