Description

This hearty vegetable stew is true soul food! I especially like to make it when it's cold outside. The combination of carrots, potatoes and sausages is simply unbeatable. Cooking in the Thermomix® makes the vegetables wonderfully soft and the stew gets a great consistency. A dash of fresh parsley rounds off the dish perfectly. Ideal for a quick lunch or a cozy dinner with the family. And the best part: It's super easy to prepare and the whole family loves it!

Ingredients (7 ingredients)

  • 10 piece Carrots
  • 8 piece Potatoes
  • 2 tbsp Vegetable stock
  • 1 can Peas
  • 1 can Pork in its own juice
  • 6 piece Bockwurst sausages (Knacker) or Vienna sausages
  • 1 bunch Parsley, chopped

Preparation (5 steps)

Prepare carrots and potatoes

Clean the carrots and cut into slices. Peel the potatoes and cut into cubes. Set both aside.

Cook carrots

Put the carrots in the mixing bowl and cover with 500 ml water. Cook for 10 Min./100°C/speed 1.

Add potatoes and other ingredients

20 min/212°F/Speed 1 100

Add potatoes, vegetable stock, drained peas and pork in its own juice to the carrots in the mixing bowl. If necessary, add more water so that everything is well covered. Cook for 20 Min./100°C/speed 1.

Heat sausages

5 min/212°F/Speed 1 100

Cut Knacker or Vienna sausages into slices and heat in the mixing bowl for the last 5 Min./100°C/speed 1.

Add parsley

Thermomix® Setting
10 sec/Speed 1 Linkslauf Reverse

Add chopped parsley to the mixing bowl and stir in for 10 sec./speed 1 reverse.
