Description

This hearty beef goulash with pumpkin is an absolute highlight in autumn! I always make it when the days get shorter and you want something hearty on the table. The tender beef, the sweet pumpkin and the spicy sauce harmonize perfectly. The preparation in the Thermomix® is super easy and the result tastes like grandma's. Perfect for a cozy family meal or a festive dinner. A dollop of Crème fraîche and fresh parsley round off the dish. Simply delicious!

Ingredients (15 ingredients)

  • 3 piece Onions
  • 2 clove Garlic
  • 2 tbsp Clarified butter
  • 1 kg Beef goulash
  • 2 tbsp Wheat flour Type 405
  • 2 tbsp Tomato paste
  • 1 tbsp Paprika powder (slightly hot)
  • 1 pinch Caraway powder
  • 250 ml Red wine
  • 600 ml Vegetable broth
  • to taste Salt
  • to taste Pepper
  • 500 g Hokkaido pumpkin
  • 20 g Parsley (fresh)
  • 4 tbsp Crème fraîche

Preparation (7 steps)

Prepare onions and garlic

Peel 3 onions, halve and place in the mixing bowl. Chop for 3 seconds/speed 5. Add 2 cloves of garlic and chop for 3 seconds/speed 7. Use the spatula to push everything down from the edge.

Sauté onions and garlic

3 min/248°F/Speed 1 120

Add 2 tablespoons of clarified butter to the onions and garlic in the mixing bowl and sauté for 3 minutes/120°C/speed 1.

Sear goulash

Sear 1 kg of beef goulash in a pan with a little clarified butter on all sides and then add to the mixing bowl.

Season and deglaze goulash

Add 2 tablespoons of wheat flour Type 405, 2 tablespoons of tomato paste, 1 tablespoon of paprika powder (slightly hot) and 1 pinch of caraway powder to the mixing bowl and stir for 1 minute/speed 2. Then deglaze with 250 ml of red wine and add 600 ml of vegetable broth. Season with salt and pepper.

Simmer goulash

90 min/212°F/Speed 1 100

Close the mixing bowl and simmer the goulash for 90 minutes/100°C/speed 1.

Add pumpkin

30 min/212°F/Speed 1 100

Wash 500 g Hokkaido pumpkin, cut into bite-sized pieces and place in the mixing bowl. Simmer for another 30 minutes/100°C/speed 1.

Season and serve goulash

Season the goulash with salt and pepper. Wash 20 g of parsley, shake dry, pluck the leaves from the stems, place in the mixing bowl and chop for 3 seconds/speed 5. Distribute the goulash on plates and serve sprinkled with 1 tablespoon of Crème fraîche and the chopped parsley.
