Description

This hearty tomato egg dish is an absolute breakfast or brunch classic! I like to make it when I need something hearty and warm. The combination of sweet tomatoes, savory spices and perfectly poached eggs is simply unbeatable. It is super easy to prepare and tastes good both warm and lukewarm. Perfect for a cozy weekend or as a quick dinner. If you like it spicier, you can of course add more chili. A dash of fresh lemon juice at the end rounds off the dish perfectly. Be sure to try it!

Ingredients (13 ingredients)

  • 2 piece Onions
  • 1 piece Bell pepper
  • 1 piece red Chili pepper
  • 0.5 Bd. smooth Parsley
  • 1 can Peeled tomatoes
  • 2 tbsp Olive oil
  • 2 tbsp Tomato paste
  • 1 tsp Cumin (ground)
  • 1 tsp Sweet paprika
  • 1 tsp Salt
  • 1 pinch Pepper
  • 1 etwas Cinnamon
  • 4 piece Eggs

Preparation (6 steps)

Prepare onions, chili and parsley

Thermomix® Setting

Peel and quarter 2 onions. Wash, core and halve 1 red chili pepper. Wash and roughly pluck 0.5 bunch of smooth parsley. Put everything together in the mixing bowl and chop for 3 sec./speed 5. Scrape down the sides with the spatula.

Sauté vegetables

Add 2 tbsp olive oil and sauté for 3 min./120°C/speed 1.

Add bell pepper

Thermomix® Setting

Clean 1 bell pepper, cut into pieces and add to the mixing bowl. Chop for 3 sec./speed 4.

Prepare tomato sauce

Thermomix® Setting
15 min/212°F/Speed 1 Linkslauf 100 Reverse

Add 1 can of peeled tomatoes, 2 tbsp tomato paste, 1 tsp cumin (ground), 1 tsp sweet paprika, 1 tsp salt, 1 pinch of pepper and some cinnamon. Simmer for 15 min./100°C/speed 1 reverse rotation.

Add and cook eggs

7 min/212°F/Speed 1 100

Press 4 hollows into the tomato mixture. Crack 1 egg into each hollow. Place the simmering basket on the mixing bowl lid as a splash guard. Cook for 7 min./100°C/speed 1 until the eggs have set.

Serve the tomato egg dish sprinkled with the remaining parsley.
