Description

This hearty vegetable mincemeat stew is an absolute feel-good dish! With zucchini, eggplant, bell pepper and aromatic herbs of Provence, it brings the taste of the south directly to the table. The mincemeat provides a hearty note, while the diced tomatoes and a dash of red wine give the stew a wonderful depth. The preparation in the Thermomix® is very simple and saves time. Perfect for a cozy evening or as a warming lunch. If you like, you can add some tomato paste for a smoother consistency. A true all-rounder that is guaranteed to please everyone!

Ingredients (16 ingredients)

  • 2 piece Zucchini
  • 1 piece Eggplant(s)
  • 2 piece Bell pepper(s), green
  • 2 piece Onion(s)
  • 2 Zehe(n) Clove(s) of garlic
  • 1 piece Chili pepper(s)
  • 400 g Mincemeat, mixed or just beef or lamb as desired
  • 3 tbsp Olive oil for frying
  • to taste Salt
  • to taste Pepper
  • to taste Chili powder
  • 400 g Tomatoes, diced
  • 1 Schuss Red wine
  • 125 ml Vegetable stock
  • 400 g Giant beans white, large
  • to taste Herbs of Provence dried possibly.

Preparation (8 steps)

Prepare vegetables

Cut the zucchini into slices. Cut the eggplant and bell pepper into bite-sized cubes. Finely chop the onions, garlic and chili pepper. Drain the white giant beans in a sieve.

Chop onions, garlic and chili

Thermomix® Setting

Put the onions, garlic and chili pepper in the mixing bowl and chop for 3 sec./speed 5. If necessary, push down with the spatula.

Sauté the vegetables

Add 3 tbsp olive oil and sauté for 3 min./120°C/speed 1.

Fry the mincemeat

Fry the mincemeat in a separate pan with a little olive oil until it is crumbly. Season with salt, pepper and chili powder.

Add vegetables and mincemeat

Add the fried mincemeat, the diced eggplant, bell pepper and zucchini to the mixing bowl and sauté for 5 min./100°C/speed 1.

Add tomatoes and broth

Add the diced tomatoes, a dash of red wine and the vegetable stock to the mixing bowl. Season with salt, pepper, chili powder and herbs of Provence.

Simmer the stew

Add the drained white giant beans and simmer everything for 30 min./100°C/Reverse rotation speed 1.

Season the stew and thicken with a little tomato paste if necessary. Serve hot.
