Description
This hearty pepper sauce with onions, green peppercorns and cream is prepared in the Thermomix® in just 35 minutes. The recipe makes 4 servings and is ideal as a sauce for meat dishes or as a festive side dish. The preparation with wheat flour Type 405 makes the sauce smooth and full-bodied. 20 g Butter

20 g Wheat flour Type 405

400 g Cream

1 EL Tomato paste

2 TL Vegetable spice paste

Preparation (5 steps)
Chop onions
Place 2 onions, halved, in the mixing bowl and chop for 5 sec./speed 5. Scrape down the sides with the spatula.
Sauté onions
Add 1 tbsp green peppercorns and 20 g butter and sauté for 3 min./120°C/speed 1.
Add flour
Add 20 g wheat flour Type 405 and sauté for 1 min./120°C/speed 1.
Simmer sauce
Add 400 g cream, 1 tbsp tomato paste and 2 tsp vegetable spice paste and heat for 15 min./95°C/speed 3.
Season sauce
Season the sauce with salt and pepper and serve.
