Description

This classic dark sauce for the Thermomix® is based on onions, carrots, celery and red wine. Preparation in the Thermomix® takes about 35 minutes and yields 4 servings. Ideal as a hearty sauce for meat dishes, especially suitable for festive occasions such as Christmas or winter menus. The sauce is a perfect complement to main courses.

Ingredients (15 ingredients)

  • 1 große Onion
  • 1 große Carrot
  • 1 Stange(n) Celery
  • nach Geschmack Oil
  • 1 EL Sugar
  • 1 EL Tomato paste
  • 1 TL Medium-hot Dijon Mustard
  • 250 ml Red wine (dry)
  • 400 ml Duck or Poultry Stock
  • 2 Allspice berries
  • 2 Cloves
  • Salt
  • Pepper
  • 1 Msp. Nutmeg
  • 2 EL Sauce thickener

Preparation (8 steps)

Prepare vegetables

Peel or clean the onion, carrot and celery and cut into rough pieces.

Chop vegetables

Put the prepared vegetables into the mixing bowl and chop for 5 sec./speed 5. If necessary, use the spatula to push down from the edge and repeat the process.

Sauté vegetables

Add oil to the chopped vegetables in the mixing bowl and sauté for 3 min./120°C/speed 1.

Caramelize

Thermomix® Setting
2 min/248°F/Speed 1 120

Add sugar, tomato paste and mustard and sauté for 2 min./120°C/speed 1 without a measuring cup.

Deglaze and season

Thermomix® Setting
5 min/212°F/Speed 1 100

Add red wine, stock, allspice berries, cloves, salt, pepper and nutmeg and simmer for 5 min./100°C/speed 1.

Strain sauce (optional)

Pass the sauce through a sieve and collect the liquid. The vegetables can be used elsewhere or discarded. Alternatively, the sauce can be pureed directly in the next step.

Puree sauce (optional)

30 sec/Speed 8-10

For a smoother sauce, puree the sauce directly in the mixing bowl for 30 sec./speed 8-10. Increase the speed slowly.

Thicken sauce

Thermomix® Setting
2 min/212°F/Speed 2 100

Add sauce thickener and stir in for 2 min./100°C/speed 2. Let the sauce simmer until the desired consistency is reached. If necessary, extend the time.
