Ingredients (23 ingredients)

  • 5 Stück Onions
  • 500 g Red wine (dry)
  • 200 g Red wine vinegar
  • 3 TL Salt
  • 2 TL Sugar
  • nach Geschmack Pepper
  • 0.25 TL Cloves (ground)
  • 0.25 TL Allspice (ground)
  • 10 Stück Juniper berries
  • 2 Stück Bay leaves
  • 1000 g Sauerbraten meat (from the shoulder)
  • 6 Stück Bread rolls (stale)
  • 5 Stiel Parsley
  • 70 g Clarified butter
  • 220 g Milk
  • 3 Stück Eggs
  • 1 Prise Nutmeg
  • 1 Würfel Meat broth
  • 1 TL Beetroot syrup
  • 80 g Raisins
  • 140 g Spice bars or Gingerbread
  • 100 g Cream
  • 100 g Water

Preparation (15 steps)

Chop onions for the marinade

Peel 2 onions, halve them, place them in the mixing bowl and chop for 5 sec/speed 5.

Boil the marinade

Add red wine, red wine vinegar, salt, sugar, pepper, cloves, allspice, juniper berries and bay leaves and bring to a boil for 7 min/100°C/speed 1. Then pour into a large bowl and let cool.

Marinate the meat

Cut 1 kg of Sauerbraten meat (e.g. shoulder) into cubes (approx. 2 cm). Place the pieces of meat in the cooled marinade and leave to marinate in the refrigerator for 1-2 days, covered.

Chop the bread rolls

Roughly chop 6 stale bread rolls and place them in the mixing bowl in two portions. Using the spatula, chop each batch for 10 sec/speed 6 and transfer to a large bowl.

Chop parsley and onions

Pick 5 sprigs of parsley (leaves only) and peel 2 onions and place both in the mixing bowl. Chop for 3 sec/speed 6 and push down with the spatula.

Sauté the onions

Add 25 g clarified butter and sauté for 3 min/120°C/speed 1.

Heat the milk

Add 220 g milk and heat for 1 min 30 sec/60°C/speed 1.

Mix the bread dumpling dough

Add chopped bread rolls, 3 eggs (size M), 1 tsp salt, 1 pinch of pepper and 1 pinch of nutmeg. Using the spatula, mix for 30 sec/speed 3.

Shape and prepare the dumplings

Grease the Varoma dish and Varoma insert with some clarified butter. With wet hands, shape the dumpling dough into 12 dumplings (Ø 6 cm), distribute them in the Varoma dish and on the Varoma insert, close the Varoma and set aside.

Drain the marinade

Remove the juniper berries and bay leaves from the meat marinade. Pour the meat-marinade mixture through the simmering basket and collect the marinade. Let the meat and onion pieces drain well.

Chop the onion for the ragout

Place 1 onion in the mixing bowl, chop for 3 sec/speed 5 and push down with the spatula.

Sauté the onions

Add 40 g clarified butter and sauté for 3 min/120°C/speed 1.

Add the pieces of meat and sauté for 6 min/100°C/speed 1.

Cook the ragout

30 min/Varoma/Speed 1 Varoma

Add 500 g of the collected marinade, 100 g water, 1 cube of meat broth, 1 tsp beetroot syrup and 80 g raisins. Cut 140 g of spice bars or gingerbread into small pieces and add as well. Place the Varoma with the dumplings on top and cook everything for 30 min/Varoma/speed 1.

Refine the ragout

30 sec/Speed 1

Add 100 g cream to the mixing bowl, stir in for 30 sec/speed 1, season to taste and serve with the dumplings.
