Description

This hearty sauerkraut soup is a savory dish, ideal for the cold season. Prepared with bacon, onions, potatoes and spices, it warms you from the inside and is easy to prepare. The soup is ready in about 40 minutes and is well suited as a main course. Refined with a dash of whipped cream, it is a treat for anyone who likes it hearty.

Ingredients (12 ingredients)

  • 50 g Bacon
  • 1 Stück Onion
  • 1 TL Paprika powder
  • 1 Liter Vegetable broth
  • 200 g Sauerkraut
  • 2 Stück Potato
  • 2 Stück Garlic cloves
  • 1 Prise Steegnomel
  • 1 Prise Salt
  • 1 Prise Pepper
  • 1 Stück Bay leaf
  • 1 EL Whipped cream

Preparation (8 steps)

Prepare bacon

Finely dice 50g bacon.

Prepare onion and garlic

Finely chop 1 piece onion and 2 pieces garlic cloves.

Prepare potatoes

Cut 2 pieces potatoes into small pieces. To do this, place the WunderSlicer V2 on the mixing bowl lid, select the fine disc and pass the potatoes through the slicer. Collect the cut material.

Roast bacon

Roast bacon in a separate pan and remove from the pan.

Sauté onions

Thermomix® Setting

Put some oil in the mixing bowl, add the chopped onions and sauté for 3 min./120°C/level 1.

Add more ingredients

Put the roasted bacon back into the mixing bowl and sprinkle with 1 tsp paprika powder.

Cook soup

Thermomix® Setting
20 min/212°F/Speed 1 212°F

Add 1 liter vegetable broth, 200g sauerkraut, the sliced potatoes, 1 pinch Steegnomel, 1 pinch salt, 1 pinch pepper and 1 bay leaf. Simmer everything for 20 min./100°C/level 1.

Refine soup

Add a dash of 1 tbsp whipped cream before serving.
