Description

This savory chicken dish with fresh broccoli and bell pepper is prepared in no time and tastes simply delicious! The potatoes are fried separately to obtain a nice crust. The dish is perfect for a quick lunch or dinner during the week. I often make it when I have little time, but still want to put something healthy and delicious on the table. If you like, you can add some garlic or chili to give the dish a special touch. An absolute favorite recipe!

Ingredients (12 ingredients)

  • 150 g Potatoes
  • 1.5 tbsp Oil
  • Salt
  • Pepper
  • 1 piece Egg yolk
  • 3 tbsp Milk
  • 150 g Chicken fillet
  • 1 tbsp Flour
  • 2 tbsp Breadcrumbs
  • 200 g Broccoli
  • 0.5 piece Bell pepper
  • 2 Stiele Parsley

Preparation (11 steps)

Prepare potatoes

Thoroughly wash 150 g of potatoes, quarter them, and place them in a bowl. Add 1/2 tbsp of oil, salt, and pepper and mix well.

Fry potatoes

Fry the prepared potatoes in a small pan, covered and stirring occasionally, for about 10 minutes, then uncovered for about 5 minutes until brown, and season with salt and pepper.

Prepare egg mixture

Whisk together 1 egg yolk and 3 tbsp of milk in a bowl, season with salt and pepper.

Prepare chicken

Wash and pat dry 1 chicken fillet (approx. 150 g). First turn in 1 tbsp of flour, then in the egg mixture, and then in 1–2 tbsp of breadcrumbs and press down a little.

Fry chicken

Heat 1 tbsp of oil in a pan. Fry the prepared chicken fillet in it for 7–9 minutes, turning occasionally.

Prepare broccoli

Clean, wash, and divide about 200 g of broccoli into florets.

Steam broccoli

Thermomix® Setting

Put 500 ml of water into the mixing bowl. Insert the steamer basket and add the prepared broccoli. Steam for 7 min./Varoma/speed 1.

Add bell pepper

Thermomix® Setting

Clean, wash, and cut ½ bell pepper each into strips. After the time has elapsed, add the bell pepper strips to the broccoli in the steamer basket and steam for another 3 min./Varoma/speed 1.

Season vegetables

Remove the steamer basket and season the vegetables with salt and pepper.

Chop parsley

Wash 2 sprigs of parsley, pat dry, pluck off the leaves and put them in the mixing bowl. Chop for 3 sec./speed 5.

This recipe for savory chicken with vegetable side dish is a dish that has established itself in my kitchen over the years. It is not a creation of a star chef, but an honest, down-to-earth meal that I always like to prepare when things need to be quick, but still something healthy and tasty should be on the table. The inspiration comes from various recipes that I have tried over time and adapted to my taste. The potatoes play an important role in satiation and provide a pleasant, slightly sweet note. They are fried separately so that they get a nice crust and do not become soft in the vegetables. The chicken fillet provides the protein component and becomes particularly juicy and crispy due to the breading. The broccoli and bell pepper bring color and vitamins into play. The broccoli provides a slightly bitter note that harmonizes perfectly with the sweetness of the bell pepper. The fresh parsley rounds off the dish with its spicy freshness. The Thermomix® makes the preparation of the vegetables enormously easier. Steaming in the Varoma is a gentle method that preserves the vitamins and keeps the vegetables crunchy. Make sure you do not steam the broccoli for too long, it should still have some bite. The bell pepper is added later, as it cooks faster. When seasoning the vegetables, you can let your creativity run wild. In addition to salt and pepper, herbs such as thyme or rosemary also go perfectly. For a vegetarian version, you can replace the chicken fillet with tofu or halloumi. The tofu should be well pressed and marinated before frying to get more flavor. Halloumi can be cut directly into slices and fried. For a vegan version, you can use a plant-based milk alternative instead of the egg and replace the breadcrumbs with breadcrumbs made from gluten-free bread. It is best to serve the dish immediately after preparation so that the chicken remains crispy and the vegetables remain crunchy. A fresh salad or a dip made from yogurt and herbs goes well as a side dish. If you want even more satiation, you can also serve rice or quinoa with it. You can easily store leftovers of the dish in the refrigerator. It still tastes good the next day, but the chicken is no longer quite as crispy. You can also prepare the dish well in advance. The vegetables can already be cleaned and cut the day before. The chicken fillet can also be prepared and breaded, but should be stored in the refrigerator until frying.
