Description

These savory flatbreads with ground meat are an absolute hit at any party! I have been making them for years and they are always a hit. The recipe is a bit more complex, but the taste makes up for everything. The ground meat is processed with fresh tomatoes, onions, garlic and chili peppers to create a spicy mass and spread on thin flatbreads. After baking, the flatbreads are topped with fresh tomato, cucumber and onion slices. Simply delicious and ideal as a snack or main course. Perfect for anyone who likes it hearty!

Ingredients (18 ingredients)

  • 0.5 Pck. fresh Yeast
  • 1 tbsp Sugar
  • 500 g Flour
  • 350 ml Water
  • 3 piece Onions
  • 6 piece Tomatoes
  • 2 piece Chili peppers
  • 2 clove Garlic cloves
  • 1 Bd. Parsley
  • 250 g Ground meat
  • 100 ml Olive oil
  • 5 tbsp Tomato paste
  • 1 pinch Cumin (ground)
  • 1 pinch Pepper
  • 0.5 pinch Chili flakes
  • 2 piece red Onions
  • 1 pinch Salt
  • 1 piece Cucumber

Prepare yeast

Put 0.5 packets of fresh yeast and 1 tbsp of sugar into the mixing bowl and stir for 2 min./37°C/speed 2.

Prepare dough

Thermomix® Setting
3 min/Kneading speed

Put 500 g flour, 1 pinch of salt and the prepared yeast into the mixing bowl. Add 350 ml lukewarm water and knead for 3 min./kneading setting to form a smooth dough.

Let dough rise

Put the dough in a bowl, cover and let rise in a warm place for about 45 minutes.

Chop onions

Peel, quarter 3 onions and put them in the mixing bowl. Chop for 3 sec./speed 5.

Chop tomatoes, chili peppers and garlic

Wash and quarter 2 tomatoes. Wash, core and halve 2 chili peppers. Peel 2 garlic cloves. Put everything together in the mixing bowl and chop for 5 sec./speed 5.

Chop parsley

Wash, shake dry, roughly chop 1 bunch of parsley and put it in the mixing bowl. Chop for 3 sec./speed 7.

Prepare ground meat mixture

Put the chopped ingredients together with 250 g ground meat, 100 ml olive oil, 5 tbsp tomato paste, cumin, pepper and 0.5 chili flakes in a bowl and mix well. Season with salt.

Roll out and top dough

Divide the dough into 10 pieces and roll out into circles (approx. 20 cm Ø). Place the dough circles on a baking sheet lined with baking paper and spread the ground meat mixture on top.

Bake flatbreads

Bake the topped flatbreads in a preheated oven at 200 °C for about 10 minutes one after the other.

Prepare topping

Wash the remaining tomatoes and cucumber. Peel the red onions. Cut everything into thin slices.

Top flatbreads

Top the baked flatbreads with tomato, cucumber and onion slices and serve.
